Idk if its Just me but that Little detail with jin's Hood is So cool. By that i mean he has it on entire Time until he gets hit in a Way it Goes off his head, So if you kill the opponent with barely any scratches (if any at all) you can walk out looking like a boss.

Heihachi won The King of Iron Fist Tournament 4, but he and Kazuya were defeated by Jin in the temple of Hon-Maru shortly thereafter. Hwoarang defeated Jin in The King of Iron Fist Tournament 5, then Devil Jin retaliated by sending him into a coma. Somehow, Jin's T5 ending is canon when it was supposed to be Wang's ending that would canonically transfer into the events of T6.
I think you mean to say Paul beat Ogre, but Jin beat True Ogre. Paul thought the tournament ended with base form Ogre, so he left the tournament, not realizing Ogre transformed, meaning that Paul unknowingly disqualified himself.

Beating Wang as Jin is canon, and I think it fits as the penultimate stage before Jinpachi pretty well.
