Softest Dhalpuri Roti Recipe - Step by Step Instructions - Episode 729

  • In this video I share my Mother in Laws' recipe for her soft and silky dhalpuri roti. This is best served with curry chicken,stew chicken, curry stew chicken, curry potato. In Trinidad we place some potato in the middle along with some chicken whether curry or stew , some vegetable accompaniments and drizzled with pepper sauce and wrapped into a pouch.
    Makes 5-6 Dough balls
    2 1/2 cups flour
    2 tsp baking powder
    1/2 tsp baking soda
    1 1/2 cups hot water to knead - use only the amount you need to make a medium to soft dough
    1 tsp veg oil
    --------------------------------
    3 cups split peas or dhal - I always make extra and freeze feel free to make half of this amount
    1 hot pepper chopped
    10 cloves garlic sliced
    few leaves of bandania / culantro / recao
    2 tbsp. geera powder / roasted cumin powder
    salt to taste
    1 tsp turmeric
    vegetable oil

      Check your baking powder and baking soda, it may be old, or exposed to air, they deplete in strength.

    Instead of oil use ghee , much more tasty ! Also can use yogurt in the dough and leave to set for 1 hr and it will still come out soft .- for people who don’t want to use baking powder/ soda . Great recipe and lovely rotis .

      I'm not sure where andrew lives, but there are not a lot of good Trini places outside of NYC or Toronto. And if you aren't near any family, you are out of luck :(

    My mum is from mauritius and she always gets excited when her friend comes back twice a year with dahl puri. I'm hoping with this recipe I can practice and suprise her for mothers day with some of these lovely Dhal Puri! My Favourite too!!     HI Nathasha , Looking yummy and delicious but the way i do it is mixing the dhall waterl to my dough ,I mean instead using normal water to mix the flour

    I cannot believe this. I have been following a Pinerest recipe and I kept thinking I did not do something right or because I didn't have a a tawa. After my latest attempt, I thought surely, it has to be right but no. I am so fortunate to have found this video tutorial. The recipe I was using is COMPLETELY DIFFERENT. Now I see why it wasn't coming out the way I was used to! Also, I need to let it sit longer! Whoa, I am so excited to make my roti with the new recipe and directions. Thank you so much!     Natasha: You can turn this savory Dhalpuri into a Sweet dessert meal- Puranpoli. You can replace roasted cummin powder with unprocessed cane sugar or jaggery. Add the sugar or jaggery in the daal mix while it is still hot so the jaggery and sugar melts and mixes well with the split peas. You may also add powdered cardamom and cinnamon/nutmeg powder to enhances the sweet flavour. Process this mixture through mill and add this mix to your dhalpuri. You can also replace the oil with clarified butter for the rich taste. Serve this with warm milk or spicy curry for sweet and spicy taste. Enjoy!!!

      @@joyceali5958 this is where Dhalpuri comes from actually... Puran Poli existed first... either travel physically or virtually ...use the internet to learn about cultures and we'd find that we are much alike.

    Omg my fav. We make these in Mauritius too. Not sure where dhalpuri is originally from but I'm amazed Trinidad has it as well. Ours have the more or less same filling ingredients but we'd add turmeric in the dough as well to make it extra yellow. Thanks for sharing this amazing recipe 😍❤

    This is where the science comes in, the hot water activates the baking soda. Ie. A better rise equals a softer dough. I do this in my pizza dough.

      Adding baking soda when there is heat involves..unhealthy product
      1. Turmeric contains curcumin, a chemical that turns red with bases and yellow with acids in water.
      When sodium bicarbonate (baking soda) is moistened and heated×××, it releases carbon dioxide gas×××.
      Dioxide can be hazardous to the health of us humans.

    Hi Natasha, this is the best recipe for making dhallpuri. I have to make this roti using your secret ingredient. That roti looked amazing. I also enjoyed your method of grinding your split peas for me it gives the best results.

    Hello, thanks for reply. Long days ago. Used to say ' Mother- in-laws' being extremely controlled in East and west, that's why one Plant's name " Mother- in- law's tough; time has changed, not all but some daughter-in- laws are more commend, still there is no name for any plant. Many reasons " joint family " is going to vanish. New invention is " single family ". Bless you. Thanks

    Well-deserved kudos. Great recipe and easy to follow. I moved from Toronto to Vancouver and could not find any Trini/Guyanese food so had to learn to make my own. I could always make curry but never tried making the dahl puri. I now make proper roti thanks to your generous nature. Thank you for sharing!
