I grew eating this!! I'm so glad I got to see your take on it. Along with those ingredients, we add golden raisins, and grated cheese. Then we would fry it in a skillet. To get it really nice and crispy!! Sooo good!! It was my childhood/adult obsession!! When I would go to monte di Procida for the summers, my nonna always had this waiting for me when I got there!

I would LOVE a recipe for a simple but delicious mostaccioli pasta. My grandma used to make that for my cousins and me when I was little, it was my favorite meal ever.
When I was a kid, there was a lady in the neighborhood who made something like this, without the top crust...she'd use spinach, olives, and a smidge of cheese (I don't remember which)....one way we kids would eat spinach....and I wasn't privy to her recipe or technique...This recipe just brought it back...Thank you! With the top crust, the tart would be portable!!!!!
I had a craving for this, my grandma always made it for me. Behold here it is :) she used capers also. I use olives like u did instead, i love olives. Nothing better than greens and italian bread. I could eat rapini sandwiches everyday. This is another level the pizza dough ( bread)

You call it a "stuffed pizza" -- but Polish, Ukrainian, Russian, Belorussian, Serbian, etc. people would characterize it simply as a "pie": stuffing completely or sometimes partially surrounded by dough (not a classical American apple pie or such). oh I love this kind of pizza, it's a traditional dish in a town near my city in Sicily! They use to put also potatoes into the pizza dough and this make it very soft and tasty! U should try it! It's sooo delicious!

Real pizza dough is always without eggs + dairy products. If you want to be hardcore vegan you could claim that yeast is a living organism and as such pizza dough is only vegetarian .. but would you want that?
Love raw escarole salad too! Escarole is my favourite lettuce. This is one of my favourite dishes that also stems back to my childhood. My mother used to make it also with silver beet. Thanks for sharing Laura : )

The dish is wonderful and quite healthful (Italians are obsessed about their GI tract, and this is the broom of the system!). Laura's recipe sounds delicious. I make a similar pie but I do not put in olives. I do however include oil packed anchovies, grated pecorino and sultanas/raisins (yes, you read correctly!). By the way, Italian-Americans usually pronounce "escarole" as "schkadall", but it is "escarole" in English and Italian. Escarole is not a lettuce it is a member of the endive family - again, very good for one's health as well as pretty damn tasty! Thanks Laura, yours is the only food internet show I subscribe to (I do watch others individually). I don't know where you're located, but you should send a compilation of episodes to your local PBS station and perhaps get some funding for a series (your husband does do an excellent job though)
I also forgot to mention that escarole is seen by many as an acquired taste in that it is somewhat bitter, particularly the darker green parts. If you're into the bitterness, you can crank that up a bit (and save a step) by sautéing the raw escarole without blanching it - just do it slow and steady.
