  • In this video we show you how to make a forgotten traditional Samoan food called Ōloōlo. Made with equal amounts of grated green banana and mashed very ripe banana, this is a simple baked banana dish that can be eaten as snack with a cup of coffee or tea. Slightly tangy, but also sweet this dish has a unique taste and texture. Traditionally made wrapped in banana leaves and cooked in the ūmu (Samoan traditional oven using heated volcanic rocks) we have adapted this to be baked in tin foil in your oven.

Great video Ari and Tema. I'm going to try making Ōloōlo. Perfect for my gluten free, dairy free diet! And I have green and yellow bananas sitting on my bench ready to go. x

Yes Pennie, oloolo, pisua, suaesi, taufolo, vaisalo, faausi, esi that was baked in banana leaves and use fresh raw coconut as a dressing this is one of my favourite. These were all the yummy traditional dishes that was in our up bringing. Mum and dad use to make them and they will send me and my younger brother to go down the village as we lived up in the country. So we have elderly people that us kids took the food to. I remember to this day the pure love and blessings the old people used to give us. Its a reception that stay with me forever,. We were blessed for it.

Wonderful, I advise to not use the baking paper but use tin foil with butter or coconut cream smeared on the inside of the tin foil before placing your doe or mixture in it. Do a ratio of one or two ripe bananas to one unripe banana. You should do beautiful with that. Enjoy. Faafetai mo le faatalatalanoaga.
