Hi Leo is it hard to make profit from sourdough as it involve a lot of time and effort and what are your most profitable bakery items? Would it be the pastries?
In Russia we bake sourdough in square regular bread containers and that would make u at least double if not triple amount of bread in the same amount of space plus way easier to make sandwiches with and can sell to delis also!

Question Leo: how do you make sure all size is the same? Because when one sells, they have to be certain grams? For cinnamon rolls and others? You have amazing hands! Thank you for su ch videos! I am watching from indonesia
You just weigh the dough pieces. You have a large ball of dough and use your bench strapper to cut pieces off and weigh each piece to make sure each is the size you want. I am not a bread baker but I worked in a from scratch bakery and that I how the bread folks did it 😅. I use to watch them work.
Thank you! Understood that. But what I am trying to say is that hrmm… How is it possible to have the same thickness throughout the dough sheet? Because different thickness means different grams. Example: 5cm thickness throughout the dough without the help of “tools” such as dough sheeter is damn amazing. I am still learning haha. Cut pieces off take a longer time as I normally do. Maybe with practice ya? Then I can do exactly same thickness of dough sheet from one end to another end. Thank you once again for the inputs guys! And Leo thank you too!

Me personally, I like to have videos like this on the big screen at home on MUTE while reading or doing housework. It's more like background noise, without the noise. 😂

You can either weight them one by one or measure as you cut the strips. Pain Au Chocolat I weigh them x
