We've been in business about the same time as you, we currently roll out puff pastry by hand, (takes a day) I've been looking into pastry sheeters but space is at a premium I saw a couple of compact electric ones and also old manual ones like the one you have. Does the manual one save much time over hand rolling? We could squeeze an electric one in but feels like a lot of space for something that gets used once a week. What do you think?

Mixer it can take 25kg dry flour plus hydration.
When I mix 5kg I will have 80 buns
