I cook mine just like that... 6 lbs, bone on top, but "frozen"... yup, frozen. This is for serving just 2 people... when out of the oven, I slice pieces off the outside because the very inside is still frozen... then I take the roast out of the pan and put the roasting pan on the stovetop to heat (boil) the liquid and cook the pieces to each person's desired doneness, but its usually perfect for the amount 2 people will eat at one sitting. Put the roast back in the fridge, and the next day, apply butter to uncoated parts and repeat the process... second time comes out just like the day before. Love this method, no wait time to defrost for just myself and hubby. Learned this trick from an old lady friend of mine.. she had no children, just her and her hubby for about 50 years. Even couples can enjoy a roast without only having it at big affairs! Dare you to try this.... you'll love it.

Let me give you a hint about Chef John's rib roast recipe - you only need to keep it in the oven for 1.5 hours rather than 2. Cooks to the same internal temp but comes out warmer. So far I have used his method about 15 times and this Sat. will be one more time. Good luck finding PRIME beef during the holidays. I had to settle for Choice. BTW, no need to rest the meat as it has been resting for 2 hours in the oven (if you follow the original method). Also, tossing in some potatoes before heating the oven will give you nicely baked potatoes with crispy skin.
Totally agree with this. Prime rib is intimidating at first but this is tried and true. Easiest thing to prepare. I make up as many things ahead of time as possible, including sauces and appetizers as the oven is occupied. If you have a decent sized air fryer you can make two smaller Christmas tree appetizers in the air fryer on bake. I’m going to do one with home made pesto and fill the other with a thin crab spread. I have a delicious microwave carrot glaze recipe from Richard Deacon aka Mel Cooley on the Dick Van Dyke show. It’s delicious and fast and I’ve been using it for about 40 years. He did a cookbook.

6:50 NEVER eat packaged mashed potatoes. Easy mashed potatoes: Buy the best instant potatoes you can find. Ore-Ida worked well for me, but Idahoan looks good, too. Buy the regular version, not any of their flavored varieties. Mix the potatoes with 2/3 of the hot water the package recipe calls for. Beat until smooth. Add lots of butter; butter makes everything better. DO NOT use margarine. (A pox on you and your house if you do.) Beat in hot milk and cold cream in equal parts. Season with salt and pepper. This takes no more time than microwaving those store-bought mashed potatoes and mixing in goat cheese to disguise the bad taste.
