Thoughts on the mac and cheese-I always put some freshly grated Parmesan in my Mornay sauce with the other cheeses. It gives it that little extra somethin-somethin that just cheddar or Gruyère (or whatever you have) doesn’t have alone. Just a thought from one paisana to another paisano.

I discovered the magic of thickening soup with rice few weeks ago, when my kids were totally excited by soup at my mom's house. It was the rice boiled in "red soup" and since then when the soup is supposed to have red color, the rice goes always in😊

The only time I’ve had a lobster roll was at Disneyland in April. It was cold and refreshing, but I wasn’t prepared for how buttery the roll would be. They put celery and onion I think. Really love the video David! As a West coaster, lobster rolls aren’t really a thing here and it’s always nice to learn about regional cuisine. I agree crab does taste better.
On the rice as a thickening agent, we would often use a potato for this. Cook the potatoes in the sauce and just like the rice just blend it up when they're cooked.
Editing takes a lot of time, way more than people think and I think he might want to taste them as close to each other as possible. It might be easier to also clean the kitchen in one swoop and not cook one thing, clean the kitchen for filming and then cook again and clean.

I'm absolutely with you on preferring crab to lobster. Most of my birthday meal requests have been for crab legs in some form, and I like to use the canned stuff for things once and awhile too. Definitely using that crab chowder recipe!

When I moved to Norway and they told me I had 5 weeks of paid time off, my North American brain went "Ahhh this is a trick. They're TESTING me to see if I'm lazy." and I kept showing up to work even when they put me on mandatory overdue vacation. A decision I will regret for the rest of my life. 😅

Living in coastal rural Australia, we have both lobster and crab available. I've always preferred crab to lobster, I agree it's sweeter and more flavorsome. I won't turn down lobster, mum used to make a lobster mornay every Christmas Eve when I was a kid that was amazing, however eating crab beats lobster every day for me. We don't have King Crab Legs locally but our mud crabs and blue swimmers are all delicious.

You can reach out to a local vocational school and see if they can refinish your cutting board. I had one near me do that on a cutting board that I inherited and they did wonders. Looks brand new...Just a suggestion
This makes me WISH I lived in New England!!! I have got to make a trip up there, I know they must have the most Delicious Lobster and Crab! These ALL Look So Good! Just in case no one's said anything, I've heard of people using a brand new curling iron but they bought it specifically to cook/toast the inside of hotdog rolls. Just set it inside the split and let it toast. Haven't tried it myself but it'd make sense to work. Also, Newfoundland Lobster is a different animal than the stuff you'll find in New England; sweeter meat and softer - like crab - because of the colder water they're in.
I love both and will never say no to either one. I also love crawfish in a good étouffée. My dad turned me on to that over Christmas 2010 when he had everyone to his newly rebuilt house in Galveston (thanks Hurricane Ike!). Because they were still bringing in furniture from storage on Christmas Eve (something I’d been teasing him we’d be doing when we booked the airline tickets in September), he’d arranged to have several dishes ready from a local cafe that started as a caterer. One was their étouffée and I thought I’d died and gone to crustacean heaven! There was none leftover by the end of the week. As for Gino, I recognized him from the compilations I’ve seen on TH-cam of the Good Morning Britain hosts trying to understand his *very* thick Italian accent or getting him to say certain words or phrases. They’re hilarious!
In Greece, the basic time off you get is two days per month, which means at least 24 days per year. That doesn't include sick days. Also, depending on the employer, you might get extra benefits like special parental days off (if you need to get your child's grades or something) and other types of leave. When I realised, many years ago, what's going on in the US regarding work and paid time off I was shocked... and what with everything that's happening regarding human rights... if I lived there, I would probably try to move to another country. Greece is definitely not an ideal place but we've (still) got basic working rights, access to health etc. (Of course, everything can change with everything's that going on)
I have a lifelong pathological aversion to meat and seafood (don’t force your kids to eat food they really don’t want to eat, bc they’ll end up like me or my sisters ex husband who wouldn’t eat meat or vegetables), but I’ve accidentally ingested meat on occasion. Which normally ends with me at best gagging, at worst projectile vomiting. But the one time I ate “meat” (seafood is meat to me) & not only didn’t realize I’d eaten it, and actually liked it, was a cheesy, creamy crab dip. I was tearing it up until I found out. As soon as I realized what it was I immediately felt sick, I’m unable to get over my aversion that easily. But I’ve always found it interesting that the one time I wasn’t able to immediately clock that there was meat in my food was crab.

Here in MD we eat crab cakes more that anything, aside from just plain steamed crabs. This is followed by MD crab soup (which is tomato based). I've never had ?crab chowder??? in the 40+ years I've lived here.
A little constructive criticism. Check out chef jean pierre for how to zest. Also, I don't think you've done one of his. I could be wrong, but he's great. He'll show you how to zest properly. Love your work my guy!
i live in the netherlands as a healthcare worker and i only get 4 weeks of vacation per year. so not as much as you think. other jobs get a lot of vacation only the ones that work the hardest get the least vacation. it's a problem in a lot of countries. i'm not mad you said that. though keep in mind it doens't work like that in all countries in europe 😅😉
i've never had crab or lobster so i think im the perfect judge for these recipes:P lol but seriously these all look rly delicious i wish i could have a chance to taste any of them! i genuinely think i could go without eating chicken and beef and pork etc for the rest of my life if only i could eat fish and other water creatures still!! they're my absolute favourites in the whole world^^
this is only a problem to me as fish and others are very very VERY expensive in my country and the more affordable option is well.. chicken and chickpeas everything else is super expensive. so i wishh i could like catch my own fish and prawn and then mostly life off of veggies the rest of the time:P
The only experience I have with real crab was this Chinese buffet near me would put out this dish called ginger crab it was just deep fried soft shell crabs with this amazingly flavorful crunchy crust cut in half I was in love and still miss that place so much.
We get 4 weeks annual leave here in Australia. Mm is the US really one of the richest countries? You don’t even pay your waiters a proper wage! Thank goodness we don’t have to tip anyone here!!

My favourite crab/prawn and possibly lobster dish, will always be the Southeast Asian lemak chili padi 😅 that's the best way I like them. With rice and maybe some veggies. But it's always been a wish of mine to travel and try western foods!
I prefer lobster. Also I wouldn't have compared a tomato base to a cream base with the soups. Cream base will always win with me. While I don't hate tomatoes like you do they aren't my jam in many cases.
