    Fun fact: when you get a real mcmuffin, it's not supposed to have a runny yolk. It's probably more common right now, with stores being desperately understaffed and many of the experienced staff leaving, but mcdonald's policy calls for the egg to be fully cooked all the way through.

      Yeah when I worked at McDonald’s I was trained to break the yolk after putting the egg in to cook. There’s a specific tool to do it with that looks kind of like some funky tweezers

      I like my egg medium in a sandwich. When it's easy its super messy! When it's medium I get it slight runny but not bursting like balloon

    Honestly -- I'm a fan of both you and Joshua. My problem with his content isn't that he's snooty, but I feel like his "But Cheaper" is very, VERY misleading. It's done by weight per serving. Since I can't go to Market Basket and just get 0.012 lbs of kale, I end up spending/wasting more if I don't use up all the ingredients he uses. That's where I feel like your content shines through, you're incredibly blunt and honest with the recipes you test. Since I'm a big visual learner, seeing you put out everything you use at the beginning of a recipe gives me a lot of perspective.

      I couldn’t agree more. The thing that really pushes it over the edge for me is his absoluteness about it all, like its such a be-all-end-all solution while completely disregarding that what he’s saying only makes sense when its performed at scale. I like the guy’s work, he’s entertaining and definitely makes good food. But damn… that series is just unforgivable in how misleading it is.

    Honestly with Josh, I always kinda felt like he was doing a bit when he's acting all snooty over food. Like it's one part - "yeah I could do so much better, ha fast food", and one part - "it's good for what it is so I respect it, but let's do it better". I highly doubt he goes through all the effort that he does for the food in his videos every time he gets hungry and if he does, then well, good for him! He likes quality food and likes going through the effort to get it.

      He had an interview on what he eats everyday, and it's just a simple menu, his but better videos are just for fun and mostly by being suggested by his viewers, but don't get me wrong, he loves food and if it is bad, it's really bad. He clearly stands out of all the TH-cam Chefs with him and Babish, they add humor and personality than most youtubers that are just happy go lucky and just cook type chefs you find on youtube.

    Josh’s problem is his fans. His discord is down right obnoxious and they complain when he tries to change the tone to anything slightly serious. His cookbook is great though.

      In the grand scale of discords, it is by far not the worse one I’ve been in (those are gamer discords because, obviously) but it’s often got that bro-y hyper excessive atmosphere that the channel now seems to be mired in. I only pop in and out so I can’t say for certain what it’s like at the moment but last time I was looking at it regularly was around when he announced the cookbook coming out and people were begging for attention over that.

    The best breakfast sandwich I’ve ever had was when I worked at McD’s in HS and an AM shift cook had a super sus crush on me (he was like 40). But I’d I showed up during breakfast he’d make a fresh batch biscuits then fry me an egg and melt the cheese while on the grill. He’d use extra cheese and put extra butter on a fresh hot biscuit. Then bring it straight out to me, fresh and piping hot. It was perfect. Dude almost won me over with that sandwich. But he was still like 40 and I was 16 so no.

      @@fenix849 I knew it was wrong but I didn’t process that it was kind of a big deal that a man old enough to be my dad was pursuing me. I’ve always had this fvked up part of myself that couldn’t quite recognize sht when it happened to me. If it was a friend, I’d have been fighting the dude. I’m a mom now and I’d loose my mind if my kid ended up in that sit. I just hope I can teach my kid to see that kind of behavior differently then I did, and value herself more. So far I think I’m doing a good job.
      (Still was the best breakfast sandwich ever, unfortunately the memory of that epic sandwich is a bit tainted by hindsight.)

      @@BRobes92 at least when I worked there the biscuits were premade (but not baked) and frozen. Like a lot of the ingredients, they came into the store that way. They were then baked in large batches. I only worked the am shift a couple of times bc of school (this was before breakfast was extended) so I only saw the process a few times.

      First we take all the comments about Josh and dissolve them in water, then we evaporate it SLOWLY to about two thirds of the original volume, so gypsum and other unwanted salts fall out. We repeat this step one more time as so we can leave behind the bitterness (magnesium- and potassium-salts). Now this solution should be around 80% salt just like the comments about Josh's attitude towards fast-food and boil it down to a solid state. And voila salt.

    For the vegan one, I'd skip the "egg" and go for topping it with sauteed mushrooms, onions and spinach with a sprinkling of brewers yeast for umami. And possibly some soy sauce chucked in with the mushrooms.

      Yeah I kinda hate the trend of veganizing food by only replicating the appearance.... It hardly even makes for a good taste and makes people try those recipes as opposed to ones that may not look as good but taste way better. Vegan food definitely doesn't have to be bland and boring

    I like watching Josh Weissman, but I would never make one of his recipes - too extra. I'm ok with the actual Egg McMuffin. The whole point is I don't have to do any of the work. That makes it taste better 😃

      I’ve made his hollandaise sauce, avocado toast with smoked salmon, butter, caesar salad, focaccia, mac & cheese, steak, panda express chow mein, english breakfast, korean fried chicken (probably my favorite), Italian hot chocolate, churros, lava cake, and boba. I agree though, often time consuming, and I can’t recall a single time for most of these recipes well I had to make a trip to the supermarket for ingredients.

    One more observation is that homemade is never the same with many take away / fast food items as we don’t let them sit and sweat in the wrapper … that’s the step that makes the difference. 😉 sounds gross but is actually the forgotten finishing step!

      When I worked at McD's like...30 plus years ago... they told us that quality declines rapidly after 10 minutes. So literally anything you don't eat right away is going to be much worse than anything fresh. I wince on channels where they eat the menu and order everything at once.

      You bring up a good point. But I think it depends on the food? Sandwiches def need to "sweat" in the wrapper and it makes such a difference. But a crispy food, like fries or fried chicken will actually degrade when sweating. So when making comparisons for crispy foods the person making it home should either eat it at the restaurant fresh or wrap their creations in a sealed bag or wrapper so theirs gets soggy too otherwise it is unfair.

      I worked at 5guys and can confirm, eat the fries ASAP but let that burger sit for a few minutes in its wrap. It stays together better too. Only thing I don't think it improves are things like crunchy tacos lol

    Some predictions: Inside Edition will take either second or third for being a very faithful recreation, Josh and Sam will be tied for first, but Josh's culinary complexity will eek out over Sam's, and Sauce Stache will be very good but lets be real, we crave egg mcmcuffins for cheap semi-meat, not good healthy-er food.

    Did anyone else catch that he used sweet Italian sausage on the first one? That has quite a different flavor profile than standard pork breakfast sausage...not that it would be "bad" but it would definitely taste a little off.

    I don't doubt that everything Josh makes is fantastic, but I'll never know because I can't afford basically any of his ingredients. Even "but cheaper" only takes the individual portion costs into account, and I'm cooking for just two people, so it never works out that I can get my costs as low as him. I lack many of the tools he has access to. I'm also way too busy to do things like bake my own bread or butcher meats in complicated ways. I don't hold that against him, but it does make his content less useful to me. To me, his channel is like, branded for home cooks but structured with content that only works in small to medium sized restaurant kitchens. Controlling costs is also important for small businesses, but can actually be accomplished through scale in a way that just doesn't work for home cooks.
    He can also sound like a bit of a prick, but I think at least some of that is a deliberate affectation for the camera. I guess if you know you're the kind of person to add truffles to things no sane person adds truffles to, you might as well lean in?

    I've been watching Josh for around 2 years. I've definitely seen a significant personality shift from this nerdy chef showing us the recipes he creates in his past time to a snobby, arrogant TH-camr. The entire snob situation started because of the 'But Better' Krispy Kreme episode where his donuts were utterly different, textually and visually. However, he still said it was better and similar to the Krispy Kreme ones. When viewers pointed out that it wasn't similar and that Krispy Kreme won, he corrected himself but said his donuts were better "textually." It kinda sucks that he said that because the one thing that Krispy Kreme is known for is their light and airy texture, while Josh's was a lot denser and had bigger holes. A lot of the more dedicated viewers say that the Krispy Kreme video was the video that started the beginning of the end. As 'But Better' progressed, it felt like Josh's snooty behavior was becoming more apparent, and more and more JW stans left. I still watch his content because I appreciate the effort and love that he puts into his videos, and his ethos of everything from scratch is really inspiring, but it sucks that we don't get to see his nerdy side as much as his snobby side nowadays.

      He said they were “textually better IMO” he wasn’t stating it as if everyone has to agree with him. I think him declaring Krispy Kreme the winner after saying he won in the video makes him a more respectable person. Just what I think. Part of his bit for TH-cam is him being this chef that can’t stand anything that isn’t made by him. If you’ve seen him in videos not on his channel, it’s quite the opposite, he eats a lot of junk and has respect for the fast food industry. Just how I interpret it, all jokes imo.

    I love Josh and his videos. But everything is going to taste good if you spend $100 to buy the ingredients and spend 3 days making it. He makes the absolute best version of everything. Most of his videos are for entertainment and not for the casual home-cook.

    I have my own version - it's a lot simpler than most of these and probably closer to what the fallen arches do. I do the egg over-hard in the ring, OK, that's the same - then I put it with a slice of Canadian bacon and a slice of either Cheddar or Gouda on an English muffin then put it in a toaster-oven.
    I also sometimes *scramble* the egg, and put everything on a *bagel* (sometimes also with a sausage patty, couple slices of beef bacon, and one of those hash brown patties if I'm really feeling extra).

    I like Joshua Weissman, I think he is a very talented chef and his recipes that I've recreated have always been fantastic but I do have to agree in that he does come off as a bit of a snob.

    Josh Weissman is a cross between Johnny Depp and Julia Child - entertaining, oddly compelling and sometimes just silly. It's a fascinating combo. His recipes are usually too complicated for me to bother replicating but I enjoy watching him, and I'm also oddly proud of him; he had a tough childhood but never waivered from his original love - cooking. Guy's done very well for himself, and he's also put together a stellar group of editors and videographers. It's amazing what people have been able to do with TH-cam, making their own 'jobs'; wish this medium had been available when I was a LOT younger.

    Yeah, I worked in a kitchen for a while, I cook myself easy meals like packet pasta and frozen foods, for myself I go for easy stuff over cooking all out, focus on taste over presentation and a lot of the easy stuff actually doesn't taste that bad, I usually just add a few spices and things but it's mostly just what it comes with

    I think Weissman is pretty spot on about most of the stuff he "But Betters". He's just a little bratty about it. Entertaining IMO. Any fast foodies know this and which franchise stores to avoid and which ones are more reliable.

    Wow i thought i was alone on the joshua weissman hate train, its not hate hate but his views on fast food are so filled with anger and elitism, like, of course the food is half assed they make hundreds of those, they dont have time and care for each sandwich. I do watch his videos but not for him personally, i just enjoy people cooking. I have also tried one of his recipes and it was good, my only complain was the white pepper, if he ever says to use white pepper in his recipes don’t, it smells like a bad pepper and overpowers the whole dish!

      I’m the same way about Josh. The food he makes looks amazing, but he seems arrogant AF when it comes to his food versus the original/traditional versions. Plus, I’m really tired of how it feels like half the time his videos are of him singing certain sentences. I know it’s meant to be funny, but it’s not.

      I dislike josh not because of his view and elitism around fast food, tho it doesn't help, but because of his arrogance and massive ego.
      Any cook or chef that refuses to cook simple food is the equivalent of announcing to the world LOOK HOW GREAT I AM LOOK HOW SMART I AM LOOK HOW TALENTED I AM.
      Fact is, some foods simple and should be kept simple or loses all meaning and it morphs into another recipe entirely.
      Even gordon ramsay understands that and does plenty simple but perfectly executed dishes. Not weisman tho

      Actually fast food is simple and it's also fast. Making a Joshua recipe will take you forever and you'll be doing dishes for an hour afterwards.

    Everyone has their own persona for their youtube channel. Josh has a very funny and entertaining one! I especially love the confidence he emmits whenever he cooks as he does his best to beat other people's foods or his "But cheaper". You can feel genuine emotion out of it. Love the man. Sad to see him get hate

    I do wish Joshua would tone down the arrogance a tad, like I'm sure what he makes is indeed better then fast food but the way he pretends that the fast food is so unpalatable is a little much.

    I made English muffins for the first time recently. The dough should be nearly batter to get the right texture. I was sure Weissman's would be too heavy as you were comfortably kneading it like bread. It needs to be kneaded with a stand mixer or a wooden spoon and a strong arm.

    I take inspiration from Joshua, but I never make his recipes because most of them require you to have equipment that I don't have or he has you make homemade components of things that are so easily (and cheaply) picked up at the super market. Case in point: on his recent monkey bread episode, he made homemade dough. I would probably recreate and just buy the biscuit dough portioned out because it's 10x easier to do.

      When compared with monkey bread made with actual bread dough, using biscuits comes out kinda gummy and not as nice. If you don’t want to make bread dough, at least get frozen dinner roll dough not biscuits.

      They’re truly unwatchable, which is sad bc the food looks amazing. I wanna die when he refers to himself as “papa” in that weird voice and chides some decision or makes a warning. I wonder if it appeals to a certain age demographic and that’s why he does it? . Le sigh. I want to like his videos- the food looks so good!

    Here’s a fact I refuse to call fun: All day breakfast DID end, because of the pandemic. Or at least, app support ended, however at least at my location you can still order breakfast items anytime. I’m sure there are many other locations that are just as lenient and compassionate.

    As a former McD employee (I'm not proud!) I know that the secret to the Egg McMuffin is that they break the yolk as soon as the white starts to set. You never get a runny yolk at Micky D's!

      Can you tell me if there is any secret to these ? Every single Egg McMuffin I have ever got, I get the slight taste of nutmeg. I have even contacted McDonald’s and asked about it, and gotten nowhere. But it is always the first thing I taste ! But I always get the one with Canadian bacon, so it is not in the sausage. Am I the only person on the planet who tastes nutmeg ?

    I don’t even eat meat and sometimes I watch Joshua’s channel. He doesn’t bug me at all. I’ve tried to veg some of his recipes and once or twice, depending on what it is of course. I like SS recipe the best, but I am a fan of his channel and recipes 🙈. Homemade veganized muffins and mushroom sounds good though! I bet that would make the sandwich even better! 🌱

    The thing is Joshua is so familiar with junk food and fast food and you can hear it when he makes comparisons, I mean you can tell when someone's just tried something for the first time in their life vs someone who knows it's flaws from eating it normally and that's why they chose to make a recipe for it. So yeah his "character" is to promote the idea we should all take the time out to cook but it's obvious that he is very familiar with all the normal foods everyone else eats--- it's very likely he grew up eating them too.
