When making those noises they are using that to also have breathing during attacks just like boxing when ppl start throwing jabs they make these hiss, hiss, hiss or whatever ssssssss noises. So I wouldn't call them unnecessary if you don't know anything about it. I barely know anything about boxing and I understand the meaning of breathing can help with punches and getting energy.

The first master is a monkey style martial artist and the second is a water style martial artist. Chinese martial arts/kung fu has a wide variety, some are based on animals e.g. tiger, dragon, monkey, praying mantis, snake etc. some other nature based e.g. water, others may be really wacky but actually effective such as the drunk style punch (the user would actually ingest alcohol possibly to the point of drunkenness and then fight making them unpredictable etc.) and many others :D Each style is unique, all have their advantages and disadvantages, so none trumps over the other, it mostly depends on the user (at least in my opinion, I could be wrong though).

Even in the movies, the actor Donnie Yen has shows usage of his extreme martial arts background using throws, slams, joint locks, knees, elbows, and various techniques not focused on in Wing Chun. In reality, Wing Chun isn’t good against any somewhat skilled fighter unless it’s paired with other martial arts. If you wanna focus on learning one martial art, I recommend Muay Thai. Focused on close range, precise, powerful blows using knees, elbows, and clinching. Very good all around and considered one of the most effective martial arts.

You'll see a lot of twisting and position changes from them because its designed for attacking multiple opponents. Third style I think is Hung Ga Kuen. Hung or Hong Family(Ga) Fist(Kuen) The Hongmen or Tiandihui is a secret society way back in China and if my history is correct were Ming loyalists who opposed the Qing dynasty. They eventually expanded and branched off into what we know as the Triads. The style incorporates a bit of Tiger and Crane from Shaolin.
That last guy IP man fight was the grandmaster at the time before IP. Only guy to ever tie with IP. History records though that IP was beat by that grandmaster.
