The newspaper in RDR, after she was kidnapped by Bill’s gang said she was 29 in 1911, which would’ve made her 17 here, born in 1882. I think the dev’s just missed the barn and it was a plot hole.

In the epilogue, she's actually still traveling because there's a hidden interaction by the front door of her house where a man will ask you what are you doing and will tell you that Bonnie is traveling
