They did everything except physically appear. Motion capture artist is the term Roger Clark seems to favour. I love the way Rockstar do it, making the characters resemble their actors enhances their performance even more.

uncle s voice actor died while the game was still in development so they had to replace all of his voicelines with someone else's. they only kept the parts where he sings that s why uncle's voice sounds different there. RIP

That happens sometimes, for example Dragon Ball in Latin America, particularly Goku at child age is played by a woman, also Goku's sons as they were children they were played by the same voice actrees Laura Torres

You know that motion capture dosn't mean that the characters need to look like the actor, because you know it's MOTION capture, rockstar made the choice to make the characters looks like the actors but it's a visual design choice, not a requirement

That's because a lot of games have used voice actors that can mocap and match the look of a character, Cole Mcgrath from infamous had to change actors because of this
