Hey Akis! Just watched over a dozen of your videos yesterday and this one reminded me of the best pastitsio I ate last summer in Thassos, at Psili Ammos. Today I woke up and went shopping for ingredients and followed your recipe. Although it took 2 and a half hours to make... Back in the '70's I worked across the street from a Greek family restaurant. Of all the fabulous food, this was my favorite. I've made a few different recipes, but it was never as good, the cheese was off. Will try this cheese combination. It's the best food ever,
Pasticcio (AKA Pastichio - Παστίτσιο in Greek) is maybe the most favorite dish in Greece, especially among children, teenagers and pasta lovers of all ages. Akis has strayed a little bit from the standard recipe 'enhancing' the pasta with feta cheese, but that's actually pretty clever, since I've always thought the pasta layer to be a little 'flat' flavorwise. Of course, feta cheese has a salty, sort of tangy flavor, which might not be well liked by everybody, but one might well use some other, sweeter and smoother type of cheese (Gruyère or even Parmesan).
Problem is that generation didn't measure anything. They couldn't tell you the recipe if they wanted to. I have my yiayia's pastitio recipe and I made it a few weeks ago and it was really good but not as good as hers.
