    As a Greek who cooks nearly all the time, that's exactly how the recipe is made. Hint : fry a bit more potatoes and Eggplants cause I guarantee you that you will eat some of them while you wait for the rest of the ingredients to get cooked 😉

      There is no accurate recipe for moussaka. You can add zucchini if you want. You can make a simple yoghurt and egg mixture instead of bechamel sauce, if you think it is too heavy. You can also choose not to fry potatoes first, but only cook them a little bit with the meat. It depends on your taste, there are no sacred scrolls for a moussaka recipe. Quit exaggerating.

    I love this recipe. My mouth waters every time I watch it. A few pointers: I use ground lamb so I use water instead of beef broth to offset the strong lamb taste. I also add about 1/2 teaspoon oregano. It is crucial to add some bechemel to the meat sauce. And I use Asiago instead of Parmesan because to me it tastes more life kefalatori. That's it! This recipe is nearly perfect.

Whenever we could traditional Filipino food we would cook more so we can bring some over to him cause he lived alone. One time he knocked on our door and brought us moussaka and it was the most flavourful and delicious dish I’ve had! sometimes i make it like a day before and let sit in the fridge to really set all the flavors in and then bake it. i swear that's legitimate soo much better!! it works really with anything with this kind of concept like lasagna etc, but especially with things like stews. but only when cooked tho otherwise you got no flavor cause everything is raw.. but if its cooked and you set it for like minimal of 12 hours or even maybe a couple, the flavors increases soo incredibly much.

    This is pretty much correct but here are some tricks: In Greece we usually put the sliced aubergines in water with salt for 30 min before frying them, otherwise they get bitter, also in some places we add a layer of courgettes, but they must tasteful, we cut potatoes slightly thicker and do not fry all vegetables completely because they will also get baked in the oven with the whole thing, we use fresh tomato in the mince meat and half a tea spoon of sugar to remove the bitterness of fresh tomato, plus some pelte, we also add a little bit more of olive oil and water so the sauce is not so dry, we don't add thyme and nutmeg in the mince meat, but 2-3 cloves which we remove when the sauce is ready, cinnamon is not preferred by many (I personally like it) but you must not add too much because it gets bitter. We often add some red wine in the sauce when it's almost ready, and instead of parmesana we add graviera or kefalograviera (saulty greek cheeses). Kali orexi!

Kefalograviera cheese is a delicacy in Egypt and Egyptians would have it every day for breakfast or dinner but not so much anymore cause it is expensive now haha but I love it 😻….love Greece, love the Greeks, love Greek food ❤

    Hi there I am Greek and I am a chef as well.
    All I can say is very well done!!!!
    That's exactly how I cook my moussaka.
    Everything is right on that video.
    For healthier option you could bake the courgettes and the aubergines in the oven.
    Personally I like both ways as there's nothing wrong filling my Tammy with that delicious food 😋😋😋

      Zucchini is a great idea too cause it softens easier than eggplant. I just roast or bake the slices of eggplant and potatoes in beef broth the night before. U can also use ground turkey if u eat less beef. Just add extra thyme or oregano for extra flavor cause beef gives more flavor. Or u can mix beef and turkey. Or add a beef bouillon to the ground turkey mixture.

    I did this and followed it exactly - wow - I’ve been chasing a truest authentic mousakka for years and years - this year because of Covid we didn’t go to Greece so I did a Greek, night music, table cloth, home made pittas, Kefalonian wine etc and this amazing mousakka. Thank-you it was lovely - this is a keeper. I didn’t quite get the béchamel set as in the video even though I left it an hour to stand, so may reduce the milk quantity next time - any clues at all?

    • @Margo-m4u
      @Margo-m4u 2 ปีที่แล้ว +3

      Do not reduce the milk. Bechamel has to boil enough until you see big bubbles forming on the surface. If you take bechamel out of the fire too soon, it never thickens enough. Trust me! I'm Greek and it's my favourite dish.
