As someone who is very much an amateur and has attempted handmade pasta from scratch (once was bad enough), an expert calling ravioli making “soothing” is the level of confidence I hope to achieve 😭
It is really simple, what was your problem? I recall having issue with the machine first time using it, too. You can even tear dough into bits with your bare fingers, not using machine. Not for ravioli, though.
i am an amateur and i admit of spending 4 years making a specific recipe perfect. cooking is fun without any pressure.

I have started on my journey of fresh pasta making and really loving it. When looking for a decent book on the subject I saw that the 'Pasta Queen' has one! I was hesitant at first but this truly is a great book with no nonsense explanations of ingredients and methods but really great recipes. And as a bonus, she is gorgeous!

Queen... 1 question. Would it be better to use semolina instead of flour after rolling the pasta? My Nonna used semolina almost every time , from bread to pasta to pizza? 😊

🤔? I'd say it all depends on who made either & what ingredients are used in them- insides & outside sauces. Example these spinach ravioli, not a fan of spinach at all so doubt I'd like them (but I'd definately at least try hers, someone elses I most likely wouldnt) but switch that spinach filling to a mushroom filling & Im all in & would most likely try them no matter who made them.
