I just made it (if you don't have a pasta machine try to invest in one, they are half price on eBay - given for a wedding present and never used), don't fear the mint, with the butter sauce it mixes very smoothly. Drink a good glass of wine with it to neutralise the favours. Chef Gennaro is sharing hundreds of years of local food culture with us, thanks man. One word, FANTASTIC!
Gennaro, you are amazing! Thanks for the simple and delicious recipe. I added crushed cashew nuts (and brazil nut) to the ricota, because I wanted it more crunchy. The cashew nut has a light flavor (different from walnut, hazelnut etc), that's why I chose them. It was my first pasta and it was awesome.
I wish I was there to see him do it live, the hear him talk about it full of passion. Or just to be on that wonderful location. For a brief moment when watching this I was away from all hard things in life. Remember that all good things in life aren't things.
Made this today and it was surprisingly unbelievably delicious!!! Substituted fresh basil instead but once my mint returns in spring ill be making this recipe again 👍👍👍👍👍👍👍👍👍

You brought up memories of my childhood with this video. My grandmother made ravioli every Saturday with my cousin and I by her side. I didn't like the wine at dinner, but I gobbled up the home grown peaches she soaked in my glass of wine. I'm not sure what happened to that wine (made the old fashion way in the basement), but I'm sure someone drank it. (Grandfather) Most of her food and ingredients were shipped here from Italy. Not an expense back then.

Excellent recipe, but I prefer to use sage instead of mint for the lemon/butter sauce. Just make sure you don't add it until the end when your butter is already brown, as it will crisp up quite quickly.

I attempted this yesterday and it turned out wonderful. Replaced ricotto with cottage cheese and added spinach. Dough was whole wheat. Grazie!

Thanks I stopped eating chef Boyardee due to some reasons and I had a huge craving for Ravioli and I used this recipe with my own spaggheti sauce.
