HOW TO MAKE RAVIOLI From Scratch Like NONNA

    HOW TO MAKE RAVIOLI FROM SCRATCH
    INGREDIENTS:
    PASTA DOUGH:
    1kg/8 cups plain flour
    8-10 large eggs (farm fresh is better if you can get them)
    FILLING
    350g/12 cups fresh spinach
    600g/21.16OZ ricotta (strained)
    Water (as much as is needed)
    1 x egg
    Parmesan cheese
    Nutmeg
    METHOD:
    STEP ONE - THE FILLING
    1. To make fresh ravioli pasta, you start with the filing! The first step is to remove the stalks from the spinach leaves and discard them.
    2. Then, thoroughly wash the spinach. Rinse it, remove the water and then rinse again, putting the leaves into a medium pot.
    3. Add some fresh water to the pot, and put it on the stove at a low to medium heat.
    4. Add a pinch of rock salt, mix it through and then leave it to boil with the lid on, stirring it every so often so that the leaves on top cook too.
    5. Once the spinach is cooked, strain it and press all of the water out using a wooden spoon.
    6. Next, put it onto a flat plate, spread it out and leave it to cool.
    7. Put the ricotta into a mixing bowl and squash it down using a fork.
    8. Sprinkle in some nutmeg (or cinnamon, but Nonna chooses nutmeg every time!)
    9. Next, add an egg, mixing it through really well, before adding up to two cups of grated parmesan cheese.
    10. Mix again using the fork and taste the mixture to see if you might need to add a few more sprinkles of cheese or maybe a pinch of salt.
    11. Next, put the spinach you cooked earlier into your hand, and squeeze out any remaining water, before chopping it up using a pair of scissors (or a chopping board and knife).
    12. Add the strained spinach to the ricotta, and then mix well with your fork before adding a generous amount of grated parmesan and mix once again!
    STEP TWO - MAKE THE FRESH PASTA DOUGH
    1. Put 1 kg/8 cups of flour on to your chopping board to make the fresh dough for your ravioli pasta.
    2. Create a well in the middle of the dough, and crack 8/9 eggs into it, leaving one to the side in case it is too dry while kneading.
    3. Beat the eggs well, using a fork or your hands, before slowly dusting in the flour on the sides of the well, combining it with the egg.
    4. Continue to mix the egg and flour, bringing it together and then slowly creating a pasta dough. There will be lots of flour crumbs that break away from the dough, keep cleaning the bench by putting these pieces back into the dough and continuing to mix.
    5. Once the dough starts to thicken, use both hands to knead the dough, until it starts to smooth out and all the flour disappears.
    6. Be careful not to knead the dough too much or it will harden and the pasta will not be right for fresh ravioli!
    7. Leave the pasta to rest for a few minutes, covering it with a bowl.
    STEP THREE - MAKE THE RAVIOLI
    1. Attach your pasta machine to the bench you are working on, and sprinkle some flour on to it. Turn the nozzle to the widest setting (normally ‘1’).
    2. Cut a small portion of dough in preparation for the first sheet of pasta and press down on it slightly with the tips of your fingers before taking it through the pasta machine to flatten it........

      My mother in law and Grandma Verre made the best ravioli…. Super tender and perfect flavor….😉 mom and grandma only used the machine for scraps that they kept warm in the hand after rolling out sections of dough into super thin circles. We also do not fold them, ours are full circles, crimped with a fork and a bit of flour. Now I want to make ravioli….

    I just made a large batch of ravioli , I made mine with ricotta , lemon zest and Italian parsley, and a lot of pecorino It was soo tasty - sadly it didn’t last long enough ! Nonna, please start your own channel . Learning from your grandson as been a joy - but learning from the person who taught him, would be a dream come true. The thing I had the hardest time with was making sure all the air got pushed out.

    I remember helping my Grandma making ravioli in her Brooklyn apartment when I was 10 yrs old.
    She made it in the kitchen & then put them all on a clean sheet in the bedroom to dry out a bit ?
    It was the start of my Love of cooking.

    This took me right back to my childhood and my grandmother’s ravioli. Unfortunately, I was too young to remember how she made them last time I had them. Now I can try to replicate it. Thank you, Vincenzo and Nonna. I can’t wait. I haven’t had authentic ravioli in over 30 years.

    Everything in this is wonderful. My love for all traditional thinking, old fashioned working, Italian language, eye ingredient measuring, and a reserved Nonna being patient, that only when paying close attention we can hear her true thoughts. I looked for Italian ravioli making and this was my favorite video. Made pasta with my machine before but this is the best. Making this today. Love from Utah.

    I made perfect ravioli once with the attachment for my stand mixer. The key word here is "ONCE"! Every time after that first time, it was a fail. Nonna's ravioli looks like something I can do, so I'm going to try it soon. I used the almost the same filling Nonna used, but I left out the spinach. When I make Nonna's, I'll be adding the spinach to it. I would love to join you for dinner, but I'm in Ohio USA and my passport has expired.
    The reason Nonna's Ravioli turns out so great is because she blesses the dough.

    I'd help my grandpa and grandma make them when I was young. Around the Holidays they would make over a hundred of them. I used to call them pillows. I would always get the first taste for helping.

    I followed the video, but when I put the pasta through the machine, it's coming through like lace. What have I done wrong? It feels like it's the right consistency, it's not too dry or too wet and it's got some elasticity. Have I not kneeded it enough? I rested it for half and hour. If I kneed it again, do I have to rest it again?

    I have made those about ten times now and the best advice I can give to a beginner is to really spend a lot of time kneading that dough to get it smooth. Took me a few tries to get it right

    How is your nonna doing these days? You are so lucky to still have her with you. I miss mine everyday. Nonna used to make ravioli, besides the usual ricotta, with a lamb/ricotta filling that no one bothered to write down. 😢 She was from the Le Marches region. Even her sauce has a unusual ingredient but is used in that region and adds another whole level of flavor. I still make it that way.

    I made this recipe yesterday. The dough didn't work out so tried again with 1000 grams of flour and ten eggs which seemed to go much better. For the filling I did the two cups of parmegiano but added a cup of mozzarella and a cup of pecorino.
    My Italian friend said for pasta that for every two eggs you use,you add an egg yolk.

      @@vincenzosplate Absolutely. I was gifted an Italian cook book from my Nona on my dad's side, it is copyright 1950 it's the Talisman? It has so much of the foods dad would make for us growing up. But you and Nona Igea have made it easier for me to make so many more dishes. You and Nona Igea are my go to for all my Italian cooking, only the best and freshest of everything. Thank You for opening your heart and home to us all.

      @@hanouf679 I was successful the first time. Went back over the sheet of ravioli with a ravioli wheel. Need to experiment with the dough so the machine can cut perfectly. None of my ravioli burst in whilst cooking.

      @TheRealBrook1968 I just made it just now its too thick 😅 and the dough was a bit dry I used 500 grams of all purpose flour and 5 eggs but when I let it rest for 30 minutes it became soft but a bit dry did this happen to you ?? How long did you boil it for? I put it in the pasta machine at (1) 6 times and (2) twice

    Yes Vincenzo we need to get Nonna to start her own channel, but luckily we get to see her a lot on your amazing channel..Nonna is a pro at everything Italian! I love how she never measures anything, (my mother never measured either) so that’s how I always did as well until I started my Ytube channel, I had to start in order to teach ppl my recipes. Nonna does everything perfect and I think you’re following in all her spirit of everything Italian and cooking. I could watch you both all day too!!

    Y7m! This is how my grandmother made her ravioli. The only difference...She used a coffee can to cut circles. Then she folded the pasta circle over the ricotta going. Now I want to make some. 😊😊

    What thickness did you roll out the pasta to? Was it really just the second setting? That seems very thick for two layers of pasta...

      I start from the thicker one and then gradually I pass it to the thinner one, until I get a thin enough sheet... this depends on your personal taste.
      There are those who like very thick pasta and who very thin.

    Beautiful 😊 I like meat in mine. So I use 1lb of hamburger 2lb of lamb. I make the balls with a little breadcrumbs and some seasoning then I sear them in a pan with a little red wine. Then I fill the ravioli.
