Most of the sauces is made of vinegar with soy sauce, calamansi some sugar, garlic, chili to taste.It's defintely okay to eat with your hands in the Philippines but if you are in a formal restaurant or gathering you will eat with utensils/silverware.

That black sauce made up of soy sauce and kalamasi(filipino lime) sometimes we mix with some spices like onion, tomatoes, chili, garlic and ginger 😁.
