Will surely try your recipe. I tried making layered neuris some other recipe .When fried it was crisp as ever and when cooled, I stored it in a container and the neuris turned soft. Ma'am can you please tell me where I went wrong. I will surely try your recipe and let you know. Thank you so much for your recipe and for also explaining the method in detail.
The filling inside the layered nevries or pattice is responsible for making them soft. Try to keep the Nevries filling as dry as possible, then they will remain crispy for longer time. Dry Roast all the Ingredients of the Nevries filling, and when it cools then add powder sugar, this way it will be dry. It remains good and crispy for at least 2 days out. You can keep it in fridge for more days, but it won't be that crispy, especially the filling part, tends to get soft due to moisture in the filling, but the outer layers remain crispy. Hope this helps.
I'm so sorry to hear that. Try not to disturb the folds of the pattice and they need to be fried on low flame for longer time. Hope you get it right the next time.
