Thanks for weeding out these pumpkin bread recipes for us. My mother made a delicious pumpkin bread this time of year that I think I will adapt using the 2nd recipe as the base. The original recipe also had walnuts & chocolate chips. I think I may use pecans & Lily's chocolate clips. Mahalo for all you do!!!

Tip for combining the cinnamon: scrambled the eggs and cinnamon together and then add the eggs to the mixture. This will avoid that cinnamon not wanting to mix with the liquid problem.

Best lower carb pumpkin bread ever!!! I did do one thing different. I like almond flour but I don't like the texture in baked goods. So I measued out and combined the flours and grinded them in my coffee grinder almost to the point of turning it into butter. OMGsh, it worked. No grainy texture and the bread turned out delicious. Pumpkin bread is my favorite!!

The addition of coconut flour probably helps offset the graininess or mealy aspects of the almond flour a bit so I thought it was great. My non keto fam still can't stand the texture issues that.almond flour presents so next time I am going to cut the almond flour even more with a bit of lupin.

Hey Wes, I think you & I have the same hand mixer, because I hate mine too! The low setting is more of a high setting. I don't even know what a low setting is anymore....I really hate the doggone thing. lol If you ever decide to get a new hand mixer that actually "works correctly", please let us know! I was making pumpkin bread like crazy back in early October (non keto) and I used 3 tsp of pumpkin pie spice....it's a good blend and has all that flavor you need.
I love pumpkin baked goods in the fall, we used to make chocolate chip almond pumpkin bread every year so it's nice to find keto replacements. The other thing we always make are the pumpkin rolls so that is something I would like to find a good keto friendly recipe for.
I made the second one but should have put more coconut flour and less almond flour than recipe calls for. Super gritty almond texture to it which I don't care for.
Love your videos! Omg, tried the winning recipe , but added a cream cheese filling! So amazing! It had to cook quite a bit longer and was still a tad moist, but delicious none the less. I'm thinking to up the coconut flour. Any other suggestions on how to fix this?

About how long did it take to grind the flours
@@mrs.h4728 If you grind almond flour to long, you get Almond butter. So just keep watch as you grind it. It doesn't take very long at all.
