    I've been trying different keto dessert recipes for years and I couldn't agree more about the unrealistic serving sizes. If I want a cake or a pie, you know dang well I'm not going to eat a slice as thin as paper.

    Have made this twice now. Once with bottled juice and no zest. Today I made it with real key limes (Wal mart, who knew) and just a tip for the older set like me, key limes are hard to juice . After I cut and squeezed what i could I used a small pair of household pliers to resqueeze every one. Got my half cup out of a 1 pound bag of key limes. Oh, I used the pliers to hold the limes for zesting also. My zester is like Wes'.

    A suggestion for people who are more interested in the flavor than the form factor. I’ve made the first recipe without a crust and cutting the filling recipe in half. That produces a more managable yield for two people and reduces the net carbs a bit. I put the filling into individual 6oz Anchor lidded glass dessert bowls and chill those. My husband likes a hint of crust, so I just toast slivered almond and sprinkle that over his to serve. Recipe also works with Meyer lemon. Yes, I was the kid that always left the piecrust behind on my plate, and the cake frosting.

      What a great idea!! I love pie but dislike keto crusts. So we tend to skip crust and just make the filling.

    I've been known to multiply out all the macros...then divide by the number of pieces I decide on. I'd much rather have a few more (net) carbs, with a more 'normal' slice/servings, than a skimpy little slice.

    I would just add zest to the cream topping. A good trick to get more flavour without impacting the recipe.

    I made a similar keto keylime. But I tried a pecan crust and another time a walnut crust. Both were good the pecan was excellent!!

    I used to work at a restaurant that is popular for their pies, and you're right- green food coloring was added to the key lime pies.

    We call those big ones Tahitian limes
    Also you can brown the butter to improve the crust flavour.

    You can bake the second one in a air fryer that bakes and it will be like a convection oven.

    I'm baking this right now--convection oven 300°F and 9" springform as per instructions. At 40 minutes it's still liquid in center. I'll cook until it's done but bake times still need to be adjusted.

    Wes, another suggestion for the SF condensed milk is easy fudge using some of those yummy SF chocolate chips out there.
    My favorite is Lily’s and a few black walnuts. Mercy mercy.

    You've done it again... I just bought a bag of key limes (gosh they're small) & baked an almond flour crust for this very reason yesterday. I was going to experiment but now I'll follow your lead. I did put graham cracker flavoring in the crust, we'll see how that goes🤞🤞🤞

      The filling in the second recipe was basically the old recipe for an Eagle Brand lemon meringue pie, so it should turn out just fine.

    Wes a normal Key-lime pie cut into 12 slices has approx 57 net carbs and 440 calories!! So these two Keto version pies are worth making for anyone wanting a treat as even the one that said cut into 16 slices… mean you can actually cut it into 8-10 slices and still be much healthier than a normal SAD version. 👏🏻👏🏻👏🏻

    Yes, correct about the 25 degree adjustment when calculating convection vs regular oven temps. When I make sugar free sweetened condensed milk (Carolyn Ketchum’s recipe from All Day I Dream About Food), it comes out thicker than what I saw in your video. That might have also affected baking time. Thanks for this video, haven’t had low carb key lime pie in a while, will need to make some!

    Yes I've done a key lime pie both ways no crust.For the custard in ramkin bowls place bowls in a baking pan and pour boiling water around them and bake till mostly set with some wiggle in the middle.garnish with a dollop of whipped cream and a sprinkle of slivered almonds.Like ladyfilmflam only with a water bath for the custard.Great minds think alike.     Maybe when the person said to cut 2 pieces of pie. You should take both out pieces out at the same time so it does not mess up the pieces. Love your video!!

    I’ve been a Thrive subscriber for over a year now and love it.
    I can find key limes in bags at the supermarket or Walmart occasionally. When I find them I squeeze and freeze in ice cube trays. Lasts a long time in there.

    They look good.
    It seems like the second one could have come in at less calories, and we could have a larger slice, if not for the large amount of whipped cream. Also, you said it was filled to the brim with the custard. Perhaps I could use less of it.
    I guess if I am going to try I better get out there and find some keylimes soon.

    Ugh. These recipe creators need to understand that cheesecake is served in 16 slices (for a 9"), and pies (9") are served in eighths. They're just fudging servings to make the macros look good.

      So do food manufacturers. A can of soup is like 540mL but one serving is 250mL. They do this so a serving will have less than 0.5gr of whatever and then it's "fat/sugar/etc free"

      I would love a recipe, too! The lowest carb product I have found, though, is Baja Bob’s. (Btw, the Mai Tai mix is stellar. I use the dark, spiced rum in it. 😋)

      I absolutely have to watch calories on keto. Over 3 years keto here and I can easily gain weight if not watching calories as well.

      The Hungry Elephant has a lot of alcoholic recipes.
      Calories are a lab determined value, determined by burning food in a test tube. We don't metabolize food that way. Calorie values given for a food are a combination of fat, protein and carbohydrate. Our body does something different with each of those macro nutrients. On a ketogenic diet you need to keep your carbs low enough to get, and stay, in ketosis. If you are in ketosis you are unlikely to overeat on fat and protein, it's really hard. So keeping track of carbs, and testing for ketosis is the critical factor

    Wesley, thank you so much for all your hard work. Because of you, I’ve practiced different recipes from various bakers/cooks that you’ve mentioned and tried. Carolyn’s coconut cream pie recipe you featured is perfect and I make it often. The perfect key lime pie is something I’ve strived for. (I love how they called you in the night…mine do that, too!!!)
    I use Carolyn’s “All Day I Dream About Food” regular almond crust, not her graham crust that goes with her key lime pie. That crust is just damn perfect (and you do bake it first). I also prefer her recipe for sweetened condensed milk. Then, for the filling, I use Big Man’s World key lime pie recipe but I use the StaySnatched gelatin suggestion in the warmed lime juice. And I only use about 1/2 cup of cream instead of the full cup…actually, I play this by ear. Make sure and taste it for sweetness before you pour it into the crust. Then use Carolyn’s low carb whipped cream recipe…but this doesn’t matter so much…they’re all so similar. Anyway, this will turn out the perfect key lime pie and it’s easy to make.
    And I have you to credit for helping me cut and paste the recipe that I’ve found that we like the best.

    I am a huge key lime pie lover! Can't wait to try this! I'll go for the tart one. When I vacationed in Florida one year, I had to test the key lime pie at every restaurant we went to! What a treat that was and Florida was beautiful. Wasn't used to the humidity though, we live in the Arizona desert. I'm prediabetic, so it is a huge relief to find your recipe! Thank you so very much! 😁

    And yes. there is absolutely no way a fan forced oven cooks at the same heat and time as a convection oven. fan force is always lower temp and less time

    Loved seeing this battle. Key lime pie was occasional splurge.
    Also, “keto cottage cheese ice cream” recipe suggested using sweetened condensed milk as an added flavor together with vanilla.
    This keto recipe for would work.

      It’s a struggle, my friend! (And one reason I’m not losing weight as fast as I’d like, to be completely honest.) In this instance, I divided each pie in half, to create one full pie and gave it to a friend with a hubby and two hungry teenagers. Get rid of the temptation! LOL

    When converting between convection and not convection it is usually 25 degrees up or down depending on which type of oven you are converting from. In addition sometimes temperature is not enough of a change and you also have to change time up or down. If you remember that the air circulating causes it to heat more evenly from all sides and cook more quickly it often takes some experimentation to get converted recipes right.

    They probably have a lime extract that could bump up the lime flavor. They both look great to me, and it's a great pie for hot days. 😊

    Wes, would be great if you indicate total carbs, not just net. Many in the Keto community, particularly diabetics, count total carbs, especially in baked goods like this. Love your videos, I watch every one!

      I usually do, and didn’t this time. My apologies! Since there is no substantial fiber here except for the crust, most of the additional carbs are from the Erythritol sugar alcohols. But I should have included that!

      Just takes a minute to put it into a calculator to figure and then you have the opportunity t adjust serving sizes as well, if you want to.

    Toasting the almond flour sounds like a good plan. Will try that when I make cheesecake this weekend.
    Edited to add: I think the recipe developer for the second pie took into consideration the macros for a slice depending on the slice size.

      I agree. That’s what makes it so annoying - they create a recipe then decide, “OOPS! Too many carbs! No problem - I’ll just reduce the serving size to a thimble full!”

    I have made the no bake version and committed the sin of using key lime juice. Even in Florida, key limes aren't easy to find sometimes and a pain to deal with being so small. Also you're not missing much on the convection oven. I use it primarily for roasting. But hey, love my air fryer!

    Because Keto desserts tend to have more calories than regular versions, I don't tend to make full desserts like this (whole cake, whole pie). I would probably make the no-bake version and make it into fat bombs instead. But they sound great!

    Wes, part of your cooking issues with convection vs. regular oven also has to do with the fact that you used a glass pie pan to make it. Glass insulates what's in it, so even if you'd had a convection oven, but no springform, you would still have had to bake it longer than the recipe called for. To convert a convection oven recipe for a conventional oven, yes, you increase the temperature by 25F, but also the cooking *time* by 25 to 30%. So this recipe call for 300F and 35 to 40 minutes, so, for a conventional oven, that would be 325F, and 45 to 50 minutes. I had to do the reverse of this a lot when I was living in Oz for a summer (winter, here 🙂), as convection ovens are pretty standard, and I'd never even seen one before I lived there!

    If you have a Fan forced oven it cooks at approx 20deg hotter than a normal Conventional oven… so if the recipe says cook at 300f (150c) for 30-35mins in a Fan forced oven. Turn a Conventional oven up to 320f ( 170c) for same amount of time 30-35mins… but always check about at 25mins to see how it looks. Insert a clean butter knife into the middle of your pie or cake and if very wet and not set add an extra 5-10 mins. Check again. Hope this helps. Cheers.

    It might be more the 25 degree Fahrenheit you need to increase. In Celsius when the degrees are for fan and conventional there are 20 degree difference.

      Gitte Clausen: You are correct. Each Celsius degree is 1.8 Fahrenheit degrees, so should probably increase the temperature by 36 degrees. (or 35 degrees since most regular ovens set in 5 degree increments.)

    My convection oven raises the temp by 25 degrees when the fan is turned off, so, yes, bake at 325.

    I have to be very careful about sweets. I lose control and eat WAY more than I should so I just don't buy sweets.. I have dark unsweetened chocolate that I have to melt and sweeten and that slows me down quite a bit.
    Thank you for your book and for testing recipies - I have tried multiple recipes I've watched you make and they are PHENOMENAL!
