A flat Plywood could lay over the reclined passenger seat and rear seat. It would sit higher up to the ceiling, but would prevent removal of the passenger seat.
Also if high enough you get more headroom up in the dashboard area.
You can get a square fan that wedge between the window, you need 2 fans, one that suck the air in and one that blow the air out. An open icebox only need to be left open in the car, the circulation will cool the car.
Get an induction stove with a portable rechargeable inverter.

American dream huh... What about trading Corolla to an older Honda Fit? It looks like a tiny car but it has a fudgeton of space in the back. You can lay the back seats whole way flat and stuff. Came by your video by change and don't really know your circumstances but sleeping in a Corolla like that looks like absolute hell

NO TO THE ICE AND FAN!!!!, I live in NJ and the AC in my office didn't work, I tried the ice in a bucket (my job had an ice machine, so unlimited) with a VORTEX fan when it was 95 in my office. I also had a thermometer to measure the air, 3 inch from the bucket was 92, 6 inch 95 :( , DO NOT waste your money on a Arctic Air Chill Zone Evaporative Air Cooler or said technology, doesn't work in our region. The ONLY thing that will work is AC, if you want it to be quiet has to be an inverter AC , can be either window or portable (what I used at work) but the are quite expensive 450-700 .. You could try the IcyBreeze portable air conditioner (I have no experience with it) Hope this helps, good luck on your journey of life.
