So how does he go from how he looked in origins to how he looks in Arkham knight? It makes sense and explained it for Bane because in origins Bane becomes what he looks like in Arkham Asylum and City but why is there such a huge change for Croc?
Croc has the ability of Atavism which means everytime he's damaged his body changes and gets stronger, which is why his arms get bigger (for thicker hide) and why his arms grow spikes (to stop cutting the arms)

Croc looks different in all the Arkham games.
City and Asylum keep a consistent appearance. He’s constantly evolving, so him being smaller in origins makes sense, so does him being bigger here

It’s because they kept amputating and mutilating him. The trauma lead to an increase in his mutation which altered his physiology and made him more animalistic because that’s how it adapts.
