Shao Bing: Must-Try Taiwanese Flatbread 燒餅

  • Some incredibly flaky crispy Taiwanese/Chinese Shao Bing (Recipe Below)
    When it comes to fragrant, aromatic sesame bread which fills the air with sweet aroma... there's only one winner. Learn to make this from scratch! Honestly quite a fun dish to make, especially if you love working with flour and dough or you're just learning. A recipe that anyone can perfect :)

    Recipe:
    - Cake flour or low-gluten flour (1000 grams)
    - All-purpose flour (as needed)
    - Water (500 grams)
    - Sesame Paste (1/3 cup)
    - Five Spice (1/3 tsp)
    - Salt (1.5 tsp)
    - Sugar (1/2 tsp)
    - Baking Soda (1/2 tsp)
    - Oil (3/4 cup +)
    - Sesame Seeds (as needed)
    - Soy sauce(as needed)
    1. Prepare sesame filling by sifting 200 grams of cake flour into a bowl and mixing in sesame paste, five spice and 1/2 tsp of salt. Mix the ingredients together until well combined.
    Heat up 3/4 cup of oil until lightly smoking and pour into the sesame mixture. Be sure to pour in increments and stir. Mix until it becomes a smooth paste and set aside to let cool.
    2. Sift 800 grams of cake flour into another bowl and mix with pinches of salt, sugar, baking soda. Add in 500 grams of hot water in increments while mixing. Once you get one solid piece of dough, drizzle on some oil and begin kneading the dough for 5 minutes. Cover and rest for 20 min.
    3. Knead the dough once more for another 3-5 minutes, this dough should feel quite moist, sticky but not actually sticking to your fingers. Cover and rest for another 20 minutes.
    4. Dust your workspace with some all-purpose flour and put the dough on top. Roll dough into a large flat rectangle sheet (about 1/2 cm or less). Spread a layer of the sesame paste on top of the sheet making sure that you mix it again prior to this. Then spread a layer of all-purpose flour on top of it.
    5. Tightly roll the sheet from top to boom into a spiral, ensuring everything is tucked and secure. Tear or cut off large pieces of dough. Prepare a bowl of sesame seeds and soy sauce+water. Roll and fold the pieces into layers. (see video for demonstration) Dip in soy sauce then sesame seeds
    6. Rest the folded pieces for 15 minutes then roll each one out into a rectangle shape. Bake on a hot tray (let tray heat up in oven then carefully take it out) for 10 minutes on 475° and then flip over to bake for anther 4-6 minutes. Done!
    7. You can easily add anything inside this Shao Bing, a very famous one being youtiao or braised beef. Just cut as needed and stuff to your hearts content.

    Do you have to use cake flour?

      actually you can just use all-purpose flour, just a couple of tablespoons less. As long as you get that slightly sticky consistency you're good :)
