I haven't seen any buds on them yet. Been told because it wasn't hot enough this year. Q2- What is the acidity of soil? and how to fix it if you do? Thanks again in advance

Do you want more plant material now and fruit in two years, you should cut. If you want fruit in one year and more plant material in 6 to 10 months, don't cut. Personally we do not cut. You should also consider your growing region.

If the buds are falling off, wait for the plant to mature a year or so before tipping. Stressing the young plant to produce more than its capable of can result in bud loss.
