I recently bought this rub, keen to try it at the weekend. I always stuff a cut-up lemon and a heap of butter in the cavity of the chicken and then seal it up, then as it spins the butter keeps the chicken moist and juicy. I agree cherry is the perfect smoke for chicken, and apple combines well too.
