Popeye originated in the Thimble Theater comic strip by E.C. Segar. In the strip it was explained that Popeye was really strong because he ate a lot of spinach. They didn't show him eating spinach very often, but when they turned him into a cartoon character, they made spinach a central part of the story. Why cans? There was no such thing as bagged spinach in the 1930s.

Also, despite Spinach not being full or iron, it has a lot of Vitamin A, which is the real reason Segar made Popeye eat Spinach, feeling that constantly bringing up Popeye using the Wiffle Hen to remain alive lost relevancy.
