    I grew up on this cake not even knowing its name or that it is Russian. While she was alive my mom was making it for us kids as an afternoon snack with milk or tea. We just called it mom's apple cake. Thank you for this it made me so happy to remember my childhood.

    Just made this! Ended up using Fuji Apples because that’s what I had. Also added 1/2 cup toasted and chopped walnuts, 1/8 tsp nutmeg and 1/2 tsp ground cinnamon. Came out delicious and made my kitchen smell heavenly. Thanks so much for the recipe, Natasha! Much love!

    I baked your sharlotka cake today and took it to a dinner party. People loved it.
    I mixed the apples with 1/2 tsp of cinnamon and sprinkled sugar over them. I also added a little bit of lemon zest.
    I had problems with the cake sticking to the parchment liner. I think the next time I will coat the springform with some butter spray. Thanks for a good recipe.

    I just baked this cake, it's amazing. I tried different recipes for apple cake, but non of them is as good as this one. The cake texture is so soft yet not super fluffy, it's really classic. The cake also doesn't get flat after you remove it from oven. It is 10 out of 10. Everybody should try it!

    Just came across this video today; watched Natasha demonstrate every step; then bravely set out to make it myself. Lo and behold it turned out exactly the same! It rose like crazy, and the inside is light and fluffy, apples tender...and best of all it tastes like real cake, not a boxed mix. I am so pleased!     I tried the recipe today but used three red pears instead of three granny apples and a little bit less sugar (not a full cup of sugar). Very successful. This is a really great recipe. Simple and yummy. Thanks a lot.

    I want to thank you for sharing this amazing recipe. I baked it today and my husband could not stop eating it. Is the softest, fluffiest, moist, most delicious cake ever. I added more sugar and a whole teaspoon of baking powder. It came out tall and delicious. I had pink lady apples and put four of them, all in the mixture, not on top. PERFECT!!! Will be the "go to" apple cake for now on; totally different from anything else, simple, perfect... the best ever. Thank you very, very much.

    If you dust the chopped apples with a little flour before adding to the batter....the apples will not all sink to the bottom of the cake.....

      the point of this cake is apples to sink. originally we mix apples with cinnamon, put them on the bottom and only then cover with dough. its great really when 4 or less eggs are used.

    The Sharlotka must be one of my favorites cakes. I use a different recipe, 150g of Butter and just 2 eggs.(Also less flour and sugar) Definetly gonna try this one!

    I make my battter a little bit different, I espera-te the egg whites from the yolks, and beat the whites till they hold a big , voluminous (I dont know if that’s a word) form, then I add egg yolks and sugar one at a time, taking turns. To help visualize this easier- let me explain better; after the whites are fluffy but very tough looking, I add one yolk and one tablespoon of sugar, keep beating, and repeat the process till all the yolks are gone. Abs basically the rest of the cake making just as you showed! What my little process does is it makes the whole cake very fluffy in the end very spongy like it very very very melting in your mouth very airy it’s really yummy !!! Try it and let me know what do you think

    Really love this recipe I can tell you really enjoy what you do I've been a chef for 30 years and I love this recipe I used to go to a quaint littel cafe in posnine Poland were they served apple scharlotka with grated apple and cinnamon and crumble and seeds sunflower seeds on the top served with chantilly cream with real vanilla pods honestly it's something else your great at what you do natasha and your always bubley

      I noticed that too but I wondered with a well equipped kitchen like that and a fancy mixer, not having a simple peeler is amazing. I have one basic one for vegetables and a special doodad for apples that peels, cores and slices all in one go. I am going to make this tomorrow.

    I used to make a similar cake for a afterschool treat for my kids. i used a 9 x 11 Pyrex baking dish, no powdered sugar, mine was more the consistency of a coffee cake, it wasn’t so tall and fluffy. exact same ingredients tho. This looks good!

It’s a beautiful cake, I tried yesteday and replaced flour with almond flour and it was lovely.. will try the actual ingredients next time (& perhaps the oil- just to see the result 😉) 💕 thank you so much .. the actual Russian cake doesn’t use oil or butter I presume?     I really enjoyed this recipe...it's good warmed up.. and easy to make -it could use one more apple though and cinnamon for sure. I added cinnamon on top before I put it in the oven and yum.

    This used to be served at the school dinning area, i found it boring back then but now i have developed a taste for it when it is served in the office. For people in Pakistan a real cake means layers of cream on it & inside it.

    I'm Polish and in our country szarlotka looks completely different but this recipe is still very nice and the cake looks yummy, I love all your recipes :))

    I made this recipe today and I didn’t use the same cake pan I used a foil pan that wasn’t circular so I think it was a few mins over cooked but however the flavor was there it’s tasty and nice with ice cream or tea
