This man Gennaro is a miracle. Not only does he have an infectious passion for cooking which I find as charming as it is inspiring but he's able to remember all these recipes without any help or notes. My hero with the strength to beat the mixture with his bare hands.
I've never understood why this man has never achieved the status and recognition that his fellow Italians (Locatelli, Carluccio, D'Acampo et al) have. Not only is he the loveliest of men with a fascinating family history, he brought us Jamie Oliver for Goodness' sake! I'll be buying his cookbook and this Apple Cake will be the first dish to find its way into my oven and tum. Lei è un atto di classe, signore!

3 apples, any type you have at home
Zest and juice of 1 lemon
150g caster sugar
2 large eggs
1 tsp vanilla extract
50ml sunflower or vegetable oil, plus extra for greasing
200g plain flour, sifted
1 x 16g sachet Paneangeli baking powder, sifted, or use 16g regular baking powder
200ml natural yoghurt
2 tsp icing sugar
1 tsp ground cinnamon
