      Hi Gretchen! What a wonderful recipe. Is it possible to make a similarly thick and rich vegan caramel sugar-free, using erythritol instead? I'm a diabetic and have limited to no (budget friendly) options. If so, will you please make that recipe and post a video of that?

      Thank you!! And I definitely agree to it “not being enough” I definitely don’t make a profit and I barely make enough to buy ingredients every month. I call this endeavor, “my expensive hobby” 😭 but I do love the creation process and I’m so happy to share my baking experience & knowledge and especially to know know that everyone loves my recipes & that I can help veganism in some small way ❤️❤️❤️

    Now I must make this caramel!! I would prefer a vanilla cake, but also love chocolate cake. This cake looks amazing!!! WOW! I died and went to heaven watching this!

    I’m definitely making this cake! I might be the only person who doesn’t like salted caramel so I’ll make one salted and one unsalted and gift it to someone.
    I need to try the snickers one for sure.
    They both look amazing, like all of cakes. 🍰🤤

      I’ve made so many of Gretchen’s recipes even before they were vegan and I have yet to find one that disappoints. Some just stay in regular rotation because I or my friends/family love them so much.

    I would be very curious how condensed coconut milk or condensed soymilk might do in a caramel. They are syrupy and gooey already, which is good, but they're also sweet, so I'd imagine the sugar should be slightly reduced in that case. Keep up the phenomenal work, Gretchen! This looks like absolute PERFECTION.

      Yes I love the thought process!! very good!
      But also yes to all of that added sugar. Could be worth a try though you never know!

      You can boil condensed milk in the can to make “dulce de leche” which is basically caramel. I haven’t tried it yet with condensed coconut milk, but I can’t see any reason it wouldn’t work.

    I feel like I’m flooding the comments 🫣but wanted to ask is there enough caramel left over to do the drip once the cake is filled? Would the cake be too sweet?

      I love it! keep flooding the comments lol it really does help the algorithm believe it or not when there’s lots of comments!! 😁
      The caramel recipe makes close to 2 cups I put about 3/4 of a cup in the butter cream probably another 3/4 of a cup total between the layers and yes!! there was plenty left over for the drip and the topping
      As for your question is the cake too sweet? “Sweet” is unique to everyone, some people will say it’s too sweet and some people might say it’s perfect and some people might say it’s not sweet enough lol
      I think it’s perfect, but 1 slice was enough for me!!

      By sweet, I mean is the caramel sweeter than the toffee or do they both have the same sweetness, just different flavors?
      I’m eating peanuts at almost midnight thinking about these cakes😅….looks like I’ll be making this cake sooner than later.

      Not in my opinion I don’t taste at all, however I know some people are coconut sensitive and may find it to taste slightly like coconut

      Not at all! (*at least I don’t, some people ~ are super sensitive to coconut anything though)

    Have you tried the Silk heavy cream for the caramel? Would you recommend it? If not, I'll stick with canned coconut milk.

      I do not at all.. but those who are sensitive to coconut may taste it.
      When I made another version of super thick caramel for my Twix Cheesecake (using creamed coconut) I definitely tasted it then

      Hey there, I am working on refined sugar free recipes as well as oil free alternatives to my existing recipes.
      I have used monkfruit sugar 1:1 with great results, but I find that coconut sugar leaves my cakes dry. SO when I was using coconut sugar I would use just half and half organic vegan sugar

      Hi Shawna, Since December of 2019 my non vegan blog has shut down.
      I couldn't keep up the cost to host it on the internet and maintain it monthly anymore
      Not to mention I was sharing recipes laden with animal ingredients promoting the very industry I loathe
      This had been conflicting me financially & emotionally for many years, so after 5 years of keeping it free & open to the public I finally decided to shut it down.
      I do thank you so much for your support and encouragement through the ages,
      I have stunned NON Vegans with my vegan recipes, perhaps you could try to do the same?
      If not, I am sure there are tons of great recipes out there for you to use!
