Thank youuuuuu for showing how caramel can be made with coconut milk and butter!! I've made the non-vegan version but as soon as I saw this recipe ... it just made perfect sense! Caramel is in the fridge and I'm planning on making an ermine / flour frosting using a blend of refined coconut oil and vegan butter (nuttelex) rather than a straight up buttercream as shown here, for better stability. Am still deciding if I make the cake layers or throw everything down as a sheet cake and topped with pecans or something, but I am soooo keen for this cake.
Update: I made it as a sheet cake. It was amazing - tender, Caramelly, lightly coconutty goodness. Do yourself and cake loving friends a favour and make it. Don't expect leftovers.

Commenting again cos I am making it again -- and this recipe was worth it for the caramel sauce alone which can be cooked down further into a thick chewy caramel (think, dipping sauce for pretzels, ice cream toppings, Snickers or twix bar filling...)

So, how would I make this Keto as in what would be the best flour to use? The sugar part is easy because low carb sugars like Monk Fruit are satisfying to me and work well with all cake and frosting recipes I've tried. But with this incredible cake, would almond flour work? You are so wonderful and amazing and your process is accessible and meditative!
