I grew up on a "Indian Reservation" we didn't have the luxury of a ice cream truck lol we didn't have the luxury of anything lol My mother from Canada took us to her City and that's the first time I seen a ice cream truck but was too poor to get any lol I would have been thankful for Popsicle or anything from the truck boring or not lol I always love watching you frost cakes lol
Thank you for "legitimizing" vegan baking in a professional, no-nonsense way. Most vegan baking channels are too quirky or casual. I like this approach.

Your explanation about your plant based buttercream icing being sturdy without the use of shortening, keeps us from over shopping and storing unnecessary ingredients. Another absolutely amazing cake recipe that will be a perfect addition to a special occasion, or placed on the list of "must try Gretchen's cake recipes". Just made your amazing white vegan cake recipe for the birthday cake, and it was delicious!! The texture and amount of sweetness are perfect, its hard to tell that this is a 100% vegan cake. I am absolutely sure that the Chocolate Eclair cake will be absolutely delicious and one of the favorite vegan cakes. You videos are so inspirational and addicting, its so wonderful that your recipes are fool-proof and its not necessary to do a bake test before special occasion day. Also, your book is inspirational too! Even without the pictures in the book, recipes themselves are mouthwatering from the descriptions. My fav was the Strawberry Shortcake Bar, but the Bomb Pop was second favorite, possibly because I was old enough to remember the U.S. bicentennial, when red, white, and blue decorations were _everywhere._ This looks wonderfully reminiscent of the ice cream treat! Thanks for posting : )
I couldn’t eat milk as a kid so I always got the ice pops from the ice cream van, as an adult my favourite became the ice cream sandwiches 🙈 as a vegan now I just get my icecreams from the supermarket :)

LOL! I know, my BF says the same thing, it was his FAV too! It's just that my Mom would buy ice cream sandies all the time, so we had them in our freezer already, so to buy one off the truck was too boring cuz I was spoiled with snacks! LOL

I love her vanilla cake and have tried hundreds of recipes but none come out like hers. Was wondering if you have any vanilla cake that might be close to it. The cake is like a home made cake with eggs and milk but I can no longer have those. I have allergies to dairy, egg, and coconut. Please let me know if you have any recommendations. I just made your dobro torte recipe which we loved. But again the cake was not the same as excellent as it was.

I don't know what Vegan Food taste like we didn't prepare it in College & I Never tried it. When you sent me some Dessert because I surprised you Once when the Lights & Coolers acted up in a Storm over there, my Greedy Girlfriend @ the Time didn't tell me it came in the Mail! This is (Meant as a Joke), but if you send it too me this Time, I promise you I'd eat it, & I don't Make Promises. Gretchen looks amazing. Even though I said it's meant as a Joke, Hummm. That Cake Looks DeVine, & you haven't lost your Touch. Congrats on your Longevity.
Forgive me if you've answered this already but it looks like there is a ton of frosting, cake layer scraps, and cookie crumbs left over. What do you usually do with those?
Since I am constantly creating & testing new recipes almost daily I always have bulk buttercream and cake scraps and random things packing into my freezer! So yes, at times in a video it will look like I have an extreme excess of those things, but always on the written blog post on my website I work it all out to exact measures for everyone so you would not be left with all of that excess. Sometimes though on a rare occasion I may not be able to get a recipe to an exact measure for you all, so I would also write that in the explanation. Typically it's with a cake batter that may yield a bit of extra batter so I would say "just make a few extra cupcakes with the excess" Specifically though in my recent Fraisier Cake recipe/tutorial I explained the excess cake in that video since I did it in a sort of weird way & I was forthright about that in the video as well. But I gave some options for avoiding that excess cake in the video & in the written post as well Hope that is a clear explanation! :) Thanks for being here!
Hey Gretchen! With now switching to an all vegan buttercream, how long can you typically leave your cake out for? In a room temperature setting like at home
I would say in a cool temperature, below 70°F it will be perfect for about 2 days, eventually it will start to get droopy, that's why refrigeration is best as it will stay for a week!

Hey great idea! I don't specifically have that recipe but when I want to make a spice cake, I use my carrot cake and just amp up the spices! cinnamon, ginger, nutmeg, and cloves at about 1 Tablespoon per recipe in place of the cinnamon listed here www.gretchensveganbakery.com/tropical-carrot-cake-recipe/ Take out the Carrots & Pineapple of course! But I would till probably go for the 2-2-2 Icing!! **now I want to make one too!

@@melissamilligan I would probably order the 50lbs of sweetex! LOL It's really the best, but see if you can search around for Hi-Ratio Shortening, THAT is what you are looking for, Crisco is really meant for frying food. Not baking

Yes, but crisco leaves a very heavy, greasy mouth feel. Not pleasant
