  • Key West Kayak Cooking - Yellowtail Ceviche (quick recipe) and a Snapper Limit.
    Headed out to the edge of the reef to do some Yellowtail Snapper fishing. For this trip, I wanted to use a special chum mix called Yellowtail slop. It is made up of a defrosted block of chum, oats, sand, and fish bits. This mixture acts as normal chum, but also clouds the water, making it harder for the fish to see the line and hook.
    To make things interesting, I also prepared a Yellowtail Ceviche using a quick and easy 3 ingredient recipe. After cutting up the Yellowtail filet into dime size pieces, I added the juice of one large lemon. You want enough to basically saturate all the fish. I then let it rest in the cooler for a half an hour to "cook". Once it is done, I pour in some jarred salsa (enough to taste) and it is done. You can also dress ir up as much as you like with avocado or fresh cilantro. This was the quick version so as basic as possible. Scoop it up with some chips, and you have an awesome on the water snack.

    You make my day when I watch your videos. Dad took us every summer starting in 1957 when I was 6yrs old. He made a Conch dish as you do ( it was legal then)... chewy but delicious. Thank you....I'm not physically able to do much anymore so bringing me along is very special.

      Yea, have to run over to the Bahamas to get it now. But then again, I hardly ever see the Conchs on the flats like back in the day. Probably need to keep it that way for a while. Commercial fishing can do some damage. Feel free to tag along. I think you will have a lot of company with all the snowed in people up North. Watch videos to get Vitamin E. LOL. Just watch real close to the monitor.

    I've been eating ceviche ever since the mangrove video. I make it at home though rather than in the boat so I don't mind chopping up all the vegetables. I always add a little chunky salsa to the ceviche anyway. Been adding some mango to the mix the last couple of times. I ordered some small circle jig hooks to mold up some heads to fish your style of freelining.! Going to paint them glow and chartreuse and probably try some plain. Love your videos!

      Sounds like you have been paying attention. I was just about to grab the jar of salsa with the mangos. That sounded like a really good combination. I'll have to give that a try with some fresh ones. Lots of the guys swear by the circle hook style yellowtail hooks as you can let them run for a while and get a definite hook set. Also, need them for fishing the Gulf. Good idea making your own. Surprisingly hard to find around here.

      Definitely good. Light, tangy and refreshing. On hot summer days or hot winter days down here it really hits the spot. Very popular at restaurants in South Florida. A lot of Caribbean and Latin influence down here.

    That looked awesome. To sit and eat the freshest fish possible and see that view is just something else. Only thing you were missing was a cold beer. All jokes aside this is why I enjoy watching catch and cook videos, I could see myself trying to do this one day as it doesn't require a whole lot. Only problem is I'm a shit fisherman and couldn't even catch a cold naked in the winter.

    I'm new subscriber and catching up to watching many of your past videos. You are a true fisherman! I also have kayak Old Town Predator PDL and served 8yrs military. I really like/appreciate your talent, instruction, cooking, and survival techniques. WOW the ceviche idea is one of those obvious options we have on the water, but i've been missing out (I have sliced & eaten Tunas out there but, never thought to bring lemons for a quick ceviche). I moved down right after high school for a bit with a friend I worked for Rick Haskins cleaning pools. he owns key west vacation rentals now. last time I went down there with my wife we brought our kayak to fish off, but felt kinda nervous w h end the current started pulling us out pretty hard so we stayed kinda to the side but close to shore. do you use a motor on your kayak? I would have felt better I I had a way to get in besides just paddle with the current pulling.

    Great video as always Steve... A "One man, bachelor ceviche on the fly", or on the kayak I guess... Lol. Man I love fishing this time of the year!!! Everything comes in shallow. As soon as it gets a little colder, those patch reefs are going to be on fire, if they aren't all ready!!! It's just way tougher to get out there because of the cold fronts. I have a couple of spots out of N. Largo Sound in 9' of water that you can catch 20" yellowtail, 2-4 lbs mangrove snapper, even hog fish. Less than a mile from shore. Anyway, thank you Steve, now I just need to get out there!!!

    Dude! You're channel is the shit! lol..... I mean that in the up most respect. I really want to move to Florida just because of your channel and some other Floridian Anglers who's channel is equally as good. Especially on a day like today, when it's just about 2 degrees with a wind chill of -10 degrees. That's what New England(Boston) brings ya! Brrrrrr lol

      LOL. This is when my channel will shine when the North is shivering and were in shorts and t's. LOL. It definitely is not reciprocal as I have no interest in hanging out in the frost box. The snowbirds will start pouring in after the holidays. A lot of people have that same plan.

      Welcome to the channel. Yea, I don't think a lot of places do the chum thing. I think it is why so many people have a hard time catching stuff down here. It is suck an odd tool but very necessary. Thanks for watching.

    I thought I had read that it was illegal in Florida to fillet or consume fish you had just caught while still on your boat? I personally could care less and more power to you for getting to eat it that fresh though.

      Assuming the same laws are still in place from a few years ago...
      So long as you immediately consume it, the law has no issue with it.
      However, you cannot fillet/debone/gut/do pretty much anything if you're just going to bring it back to shore. Unless you are going to immediately consume the fish on the vessel, you cannot mess with it till you land. Hopefully that makes sense.

      What Bradley said. It would be like sailing and cruising vessels would not be able to eat fish. I think common sense would come into play as well. Bringing back bag fulls of random filets would be a little harder to explain.

    I would like you to give us an idea about how big the fish are, in this video you are catching yellow tail snappers. I can not tell if they are 10 inch or 14 inch or 18 inch. I know to you it's obvious but the GoPro makes it hard to tell. Maybe drop the regulations from time to time, i.e. These have to be 14 inches and you are allowed 6 or 10 or whatever.
