  • Catch And Cook - Key West Style PoBoy Sandwich - Lane Snapper
    I ended up keeping one of the Lane Snappers that Jose and I caught out in the Gulf. I had not done a Lane so this worked out perfectly. I had originally wanted to do a regular Louisiana style Poboy that I had been seeing in other catch and cooks. I figured though, that instead of just copying a classic recipe, I would mix things up and do something more elegant than a Poboy. Maybe more of a middleclassboy sandwich. I ended up coming up with a simple but delicious fish sandwich which I am definitely going to do again.

    Once again, without thinking, I've watched another one of your C & C vids, before I have eaten, NOW I'M STARVING! Thanx Much! Looked a little too tasty. I made the sweet potato fries the other night using your fry twice method along with the beer-battered cod. Very tasty. I used a simplified version of the beer batter, I found on the British TH-cam channel- TAFishing with Graeme, (pronounced gram), Pullen. Pretty cool show, I get a kick out of their humor. Plus, the man has fished just about the entire planet.

    You are a genius! I mean when you catch your own fish then you cook it or even make sashimi, ( try Ahi poke ) and make po boys. I was so hungry while watching your video. I'm going to have to try your po boy style tomorrow. Btw try and get some Aloha shoyu. It tastes so much better when making sashimi. Here is a tip, if you have salty soy sauce than add Coca Cola to it so sweeten it up and it will get you close to Aloha shoyu. Keep the vids coming brah

    Awesome fish sammies & sweet tater fries. I love using panko for fried fish. I wanted to reach right through the screen & snag the other pieces of snapper. As a change from the Hawaiian rolls, have you ever tried the bread from the French bakery next to Roostica on Stock Island? Excellent baguettes and cuban bread and not expensive.

      I save them but use them as is for shark chum or when i am catching Pinfish.

    Hey Steve, any worry of fish parasites while consuming raw (non flash frozen) fish?
    After seeing your vids I was determined to do a catch n eat a surf perch (I'm from your old coast) session but was deterred from some reads I saw about fish parasites.
    Any info appreciated.

      All fish have parasites. Just like there are parasites on every piece of food that you eat. You just can't let it deter you. Cold water saltwater fish that are young are the best across the board. You have much better risk with Mercury.

    Which kind of Soy Sauce? Over here in the Netherlands I go to the Toko shop.There are at least 10 or more varieties of Soy sauce on the shelf. Your catch and cook videos are some of the best I have seen. I have been curious about your fillet method. I learned how to fillet Sea Trout in Tallahassee, Fl when I was a kid. The method I was taught is quite a bit slower and different than yours. I slide the sharp edge of the blade over the ribs instead of cutting that bit of meat away.

      Yea, we go through a lot of fish down here so we tend to use a quicker method. Easier to hack through the ribs in one swoop and then cut them out from the filet. Kikkoman is kind of the go to mainstream soy sauce.

      No, totally different fish flavor. Spanish and Kings are more oily and fishy tasting. Cero is much more like Wahoo which is very light and flaky.

      Meat is softer than other snappers. That is why Saltykayak doesnt like them.

    Invest in a good fillet knife.....seriously. As a lifetime fisherman...I can tell you there's nothing like using a fillet knife for skinnin' a fish.

      With that mind set.......a fishing hook is a fishing hook....so just use a #2 to go shark fishing...it's all the same! Line is line.....just use 10 lb test to go shark fishing. Oh well....some learn ....some don't... A sharp fillet knife is the easiest knife to use when cleaning fish....it's the reason it was designed originally. It's highly flexible so it can be curved to lay flat while skinning a fillet. It's a thinner knife to reduce drag while making cuts such as skinning. If kept sharp, nothing compares to a fillet knife while cleaning fish. So NO....a knife isn't just a knife.

    Odd, I eat shashmi often at an restaurant but I would never consider eating it with fish that I caught. Still waiting for Jack Crevalle "Catch and Cook".
