Hey for those who are cooking for one, you can use 1 egg, 1/3 cup sugar and 1/2 cup flour and it will yield about 5 to 6 cookies. This calls for a little less sugar too. Just add more sugar if you desire sweeter cookies.

I was cooking for 2 and I used 2 eggs, a bit less than 1 cup sugar, and a cup of flour. I put the sugar/egg mixture in my bullet blender as apposed to hand whipping and I coated them with cinnamon sugar Snickerdoodle style and made 6 large cookies. They turned out great!
