I live in the Southern Hemisphere, where it is 40 degrees C for Christmas. So it's not cake-baking weather at all. But I would love to make this for the holidays. Thank you!

Just made this and it is very good! The sponge is light and moist and the cream cheese icing complements it really well. I did halve the amount of icing, cos I don't like too much icing, and it was still a good amount
MK I love your recipes and your spice cake is my favourite, I get asked to make it from friends and family, this sounds very much like it spice wise and I’ll definitely try it but what’s your opinion on the difference of taste between them. I’ve got a tin of treacle here that needs used and I’ve made scones so your gingerbread is next, any other recipes with treacle would be a bonus, many thanks from central Scotland.

Every time she mentions using block cream cheese and not the soft spreadable kind my heart breaks a bit. Because we don’t have block cream cheese in the UK for some strange reason 😢
I’d be tempted to try it, anyway. How bad could it be? It’s not like nobody has never made cream cheese frosting in the UK with spreadable cream cheese before. Might not be the same, but I assume it would be fine.
@@Kumahachi8 yeah it’s totally doable, I use it often for sheet cakes and cupcakes. It’s not as stable and I would never use it for a tall multi layered cake. Unless I used it as a filling and use a more sturdy buttercream to cover the cake

Treacle is the closest, not the same but an acceptable substitute

FYI: Corn starch isn’t included in method so don’t forget to add to dry ingredients.

You can always leave out the nutmeg if you don't care for the taste of that spice. Just replace the nutmeg with more cinnamon :) Happy baking 😋
