Regarding food waste, a reasonably good option in europe seems to be this 'too good to go app,' which allows users to purchase 'end-of-day' items at good savings, both fresh food and prepared food for what would otherwise be discarded. Since there is a relatively tight timeframe for pickup, it makes the most sense to use the service if you happen to be in that area. There service isn't so widely adopted outside europe. not sure about finland, but in other nordics and the continent for sure.

I love to be outside in a tent in winter too :-) but to be honest: riding on those busy streets with heavy traffing would be a nightmare to me. Why don't you try backcountry ski and pulka? You can choose remote areas and without a stove in the tent the sleeping bags do no get wet if you use vaporliners inside. all the best from Freiburg

Indeed heavy traffic is not nice, but we face this traffic some times in our world tour and it is a part of it. the reason we didn't do that, is we wanted to cross Finland from south to north with bicycle. I personally have done many long skiing trip with Pulka in Lapland and i like it a lot. but this was not what we wanted to do. regarding the tent and stove: when we live outside in -30 for many months it is just too nice to have a warm tent at least for few hours a day. regarding Vaperliners, i have used a similar methods and those are ok but not perfect. Also it is not only sleeping bags, we dry our gloves, sucks and liner of our boots and many other things with stove. stove is just too good to for us to leave it back. Also there is one important rule for me in doing expedition: i never push my limits 100% i always try to keep some mental and physical energy as back up when is needed. Having a stove as luxury item and having that +25 degree in the tent, gives me the mental strength so i can keep doing the same trip with out stop for a year if i want to. So i don't put myself in survival situation if it is not needed. if i would do a winter trip only for 1 month then i was going back to my home then it was different. but for someone like me who is all the time living outdoors, story is different. i hope i could answer your questions. wishing u all the best, greeting from Kenya. I could share a map of the shelters. I traveled two weeks with wood stove in Russian part of Lapland but as a member of quite big group of twelve persons. It was above zero in our tent even when it was -29C outside. Such stove would be too heavy for a smaller group.
