      It's just starting to become popular in the US. It's only in the past few years that I've seen Raclette Cheese and grills available here.

    Thanks for the video👍👏. Visiting my sister in Germany in January 2023, I tried for the first time this delicious cheese n a raclette/ fondue grill with different kind of meats, potatoes and vegetables. The combination of potatoes with melted cheese was delicious. I loved it. ❤❤❤😋😋😋

    My mom and I love watching Heidi girl of the alps. So I always wondered what type of cheese her grandfather would make with goats milk

      Good question--and since Heidi is a fictional story I'll take some literary license in my response, but based in the traditional cheesemaking practices of the Swiss Alps. Since Alpine farmers spend most of the summer up high on the mountain, they make a hard cheese that ages well over the course of a summer on the alp, rather than a softer cheese like chevre that is sold weekly at the village market. There are several "alpine style" goat and sheep cheeses still made in the Alps today. That's what I imagine Heidi's grandfather made. At the end of the summer he would have taken his entire summer's cheese production down to the valley and sold it at one of the cheese markets, while reserving some for himself to age in his cellar or cave during the long winter.

    Thanks for the video! It was amazing: both restaurant-style serving and home-use mini grill with proper setup.

    Tried this twice when I was stationed in Japan. Strangely, niche international food was pretty common there, shame the cheese didn't fit very well with Japanese sausage.

    Very interesting. In Germany we do it differently. We put many things into the little pans together with the cheese. For examples slices of onions, cooked potatos, vegetables, bacon ect..

      It's fun to see the various twists and variations from one culture to another. We put just the cheese in the little pans, but all the other items you mention go on the grill on top. I guess there is no right or wrong way when you're enjoying great food with friends and family.

    In rthe 13th century there were no potatoes in Europe. Potatoes came only after Columbus. What did people use instead? Bread?

      Yes--bread. Most bread was baked on a communal basis in the middle ages and often only once every month or so. In Alpine communities, it was generally a rye bread which would be hard and dry. So the warm cheese helped to soften it up.

      What you saw at 4:17 was a seasoning, like paprika, which some people like to sprinkle on the melted cheese. It's purely optional.

    I like the cheese. It’s very stinky, smelly. My husband and kids can’t stand the smell though.

      Raclette is a great melting cheese, and also a very aromatic cheese. The wonderful aroma fills the room as it melts. Hope your husband and kids learn to love it as you do.

      Somebody finally commented on show stinky it is! But it's so delicious. That some don't consider it to have an offensive odor means they love it so much they never noticed. Anyway it is soooooo good. Everyone should experience the meal at least once in their lives.
