How To Make A Cheesy Raclette Dinner Spread

  • Acclaimed Chicago chef Paul Kahan of Publican, Dove's Luncheonette, and avec brings Switzerland’s favorite cheesy party food, raclette, to the Munchies Test Kitchen. Raclette, featured in Paul’s new cookbook “Cooking for Good Times,” describes both the cheese and the table-top grill on which the meal is cooked and the cheese is melted it.
    Paul composes this traditional Swiss dish by prepping potatoes, mushrooms, peppers, skirt steak, sausage, and leeks with some different savory marinades. As the vegetables and proteins cook on the grill, Paul preps the cheese for melting and recounts his first raclette experience at a social gathering in the Swiss Alps. Finally, Paul pours the liquified, caramelized cheese over the grilled meats and veggies and invites a few friends to drink, eat, and enjoy.

    I knew someone else would think like me. not season any of three meat and veggies is absolutely ridiculous. I couldn’t eat the chicken and all the veggies the way they introduced it to me the first time. We didn’t even have any sauce on top of not seasoning the chicken. I knew it could be better. This is the way to go. ❤️

      RolinSweetsSmkinSour because the “nose”’ or the tip of the cheese is the best part, where all the fat and moisture is. Cutting the tip is considered very rude. You’re basically taking the best bit for yourself. Tradition states that cheese should be cut in the lenght so that everyone can get a bit of the tip :)

    With the industrial raclette, you get outside Swiss/Franche/Italy it's ok to use it on whatever, but when you have alpine farm-made raclette it's a sacrilege to put it on something other than potatoes..

Performance artists who would challenge stereotypes with wit instead of getting offended and hoping somebody would care. Chefs who'd mash up cuisines and make something great turn into absolutely amazing. Now it's just boiled down to diluted angst, stylised illogical beards, veganism, artisanal coffee and worst of all arrogance and the idea that looking down on people who don't associate with your taste is a good thing. Which is truly a sad state of affairs. Being a hipster essentially meant being really genuinely passionate and knowledgeable about one thing which the mainstream didn't really care for. And that was a beautiful cultural thing. Now it's just a bunch of douchebags being total assholes.

      @@hiroipip do whatever you want on the grill, but traditional raclette is just melted cheese over steamed little waxy potatoes with pepper and cornichons/pickled onions on the side. Warm tea goes well and some people eat cured meat with it too. Only potatoes under the cheese though

      but the thing is that his video is the equivalent of a video showing to french how to do a perfect American hamburger, but only by using a baguette, snails, and some caviar...... But dont worry, we kept the chese in it...
      The thing is that he just destroyed a tradition, the raclette sort of is a religion in many countries in Europe !
      But IT somehow only is a joke, we don't take it THAT seriously, it sort of is..... An European joke ;)

      @@sami_san2314 As an American, there is no such thing. You can make your burgers anyway you want. As an American, I wouldn’t be offended if someone made burgers with snails and caviar. I don’t have to eat it. To each his own. Maybe because I have a life, little things like that don’t bother me. 🤷

      No, the original raclette is only eaten with potatoes. Maybe some pickles and small oignons, add pepper and paprika and you good to go

      It’s all a matter of taste... not Goin down this rabbit hole but If I would cooking I would use a younger maturation if that very same cheese for the Americans. As it ages the washed rind tendencies bloom, I love, the French love it but a matter of Region. All love ❤️

      @@christianjenkins4078 in the alps national borders tend to blur, the best I tried so far is swiss, like the ones made on the Simplon and neighboring crests like Visperterminen, french I can't remember I was too little, in Italy very close to the border with France in Val Ferret there are some farmers they are more french than Italian in culture, regardless they make amazing raclette
