How to Make Peanut Brittle...in the Microwave!!

  • How to make perfect peanut brittle in the MICROWAVE!! No more slaving over a hot stove watching a candy thermometer to make this amazing candy. This is super easy and quick and pretty much foolproof. I actually even prefer this to conventional brittle. Thanks go to my friend Stacey (dreamer72fem) for introducing this to me!
    What you'll need:
    1/2 cup light corn syrup
    1 cup white sugar
    1 cup roasted, salted peanuts
    1 Tbsp butter
    1 tsp vanilla extract
    1 tsp baking soda
    **My times are based on a 1000W microwave. If your microwave has less or more power, you'll need to adjust the cooking time accordingly. Sorry, I don't know exact times for other microwaves.**
    Heavily butter a cookie sheet or line it with parchment or a silicone baking mat. In a GLASS bowl, combine corn syrup and sugar with a wooden spoon. Microwave on HIGH for 3 minutes. Carefully remove bowl and add in peanuts. Stir to combine. Microwave again for another 3 minutes. Again, carefully remove bowl (use a potholder or hot pad because the glass will be hot) and add in butter and vanilla. Stir until butter is melted and combined. Return to microwave and microwave another 90 seconds. At this point the sugar syrup should be a light tan color. Carefully stir in the baking soda (it should puff up) and then immediately pour out onto your cookie sheet. Spread thin and let cool. When cool, break into pieces and store in an airtight container. Makes about 1-1/2 lbs candy. Enjoy!!
    If by chance your candy wasn't cooked long enough and has a taffy like consistency when cool, you can put it back into a bowl and microwave a few more minutes. It'll need to come back to a syrup and then cook another minute or two and it should be fine.

    I just got done making this, I used flaming hot peanuts. It is freakin' Awesome!! My Mom spent yesterday making peanut brittle the old way and told me I couldn't make it in the microwave.She is amazed. Thanks for the upload, I love your videos!

    Normally when I look at other recipes that make this in the microwave I don't trust that will work because their syrup turns brown, but this one I feel is better and simpler

    I made this recipe once, and it was perfect. Than I made it again, but with half the ingredients. Well it completely burnt lol. Smoke coming out of the micro wave and everything. So if you're like me and you can't cook for s--, well, stick to the amount of ingrediants written

    Twenty some odd years ago, when I was single, I made this and sold it for my Christmas money. I would make many, many batches. I found that after the third one I would have to let the microwave and bowl cool down or it would burn. Dont know if you have made that many batches in a row and new microwaves may be different.

      Haven't made more than one batch at a time. I'm not sure I'd want to use the same bowl over and over again without washing it but if it worked for you then by all means. Also, I don't have more than one cookie sheet so by the time it's hardened the microwave is cool again. But good info to know if someone wants to production line this.

      Sadly not. The times get screwy depending on the shape and size of the bowls you use and the outside gets overdone while the center is still cool to the touch so it's best to do a single recipe twice rather than chance doubling it.

    Please be careful when making this!! I spilt some of the hot mixture on my arm and had to go to the ER. Now I have third degree burns
