- How to make perfect peanut brittle in the MICROWAVE!! No more slaving over a hot stove watching a candy thermometer to make this amazing candy. This is super easy and quick and pretty much foolproof. I actually even prefer this to conventional brittle. Thanks go to my friend Stacey (dreamer72fem) for introducing this to me!
What you'll need:
1/2 cup light corn syrup
1 cup white sugar
1 cup roasted, salted peanuts
1 Tbsp butter
1 tsp vanilla extract
1 tsp baking soda
**My times are based on a 1000W microwave. If your microwave has less or more power, you'll need to adjust the cooking time accordingly. Sorry, I don't know exact times for other microwaves.**
Heavily butter a cookie sheet or line it with parchment or a silicone baking mat. In a GLASS bowl, combine corn syrup and sugar with a wooden spoon. Microwave on HIGH for 3 minutes. Carefully remove bowl and add in peanuts. Stir to combine. Microwave again for another 3 minutes. Again, carefully remove bowl (use a potholder or hot pad because the glass will be hot) and add in butter and vanilla. Stir until butter is melted and combined. Return to microwave and microwave another 90 seconds. At this point the sugar syrup should be a light tan color. Carefully stir in the baking soda (it should puff up) and then immediately pour out onto your cookie sheet. Spread thin and let cool. When cool, break into pieces and store in an airtight container. Makes about 1-1/2 lbs candy. Enjoy!!
If by chance your candy wasn't cooked long enough and has a taffy like consistency when cool, you can put it back into a bowl and microwave a few more minutes. It'll need to come back to a syrup and then cook another minute or two and it should be fine.

Fantastic. And now it makes me realize how very much overcharged we've been when buying peanut brittle. Never again!
Made this but with cheerios. Came out amazing and I actually liked it even more than with peanuts. 10/10 would recommend

+Dana Abshire You're welcome!
+Crouton Crackerjacks Hi, is vanilla needed
So easy... I'am going to do it rigth NOW !!!!!!!
wonderful! I made it in 10 minutes. Now I have to let my family store it at his car, as I couldn't keep my hands from it.
Normally when I look at other recipes that make this in the microwave I don't trust that will work because their syrup turns brown, but this one I feel is better and simpler
AWSOME
Yummy...Tfs, Debbie
Thankyou.
Thanks i tried one similar but time was way too long in microwave ill try this one
Dammit that's stupid simple! I was just talking about peanut brittle yesterday! Fantastic, easy recipe!! Thank you Jason!
Stupid simple is right Larry! LOL!!
Oh, thank you for this! My brother LOVES peanut brittle and I am always afraid of cooking hot sugar on the stove. Now I can make this for him for Christmas! YAY!!
You're welcome Barb! Hope you and your brother enjoy!
thank you for your comment about microwave power....I tried other recipes twice and they came out burned. I will be adjusting my power level and try your recipe. Thanks!!
that sugar looks like it would burn like napalm! Great Recipe! Cheers!
Thanks Sal!! Oh, I'm sure if you got it on your skin, it wouldn't be pretty, LOL!!
If you don't have baking soda use baking power it works just as well I tried it
Can you do this method on the stove?
Is vanilla needed
i mk mine on oven as hate microwaves but why add baking powder?
I made this recipe once, and it was perfect. Than I made it again, but with half the ingredients. Well it completely burnt lol. Smoke coming out of the micro wave and everything. So if you're like me and you can't cook for s--, well, stick to the amount of ingrediants written
I shouldn’t of watched this...it’s and this made me so starving. I regret it.
Can u use water as corn syrup
no it wouldn't be right
Twenty some odd years ago, when I was single, I made this and sold it for my Christmas money. I would make many, many batches. I found that after the third one I would have to let the microwave and bowl cool down or it would burn. Dont know if you have made that many batches in a row and new microwaves may be different.
Haven't made more than one batch at a time. I'm not sure I'd want to use the same bowl over and over again without washing it but if it worked for you then by all means. Also, I don't have more than one cookie sheet so by the time it's hardened the microwave is cool again. But good info to know if someone wants to production line this.
croutoncrackerjacks
one batch is dangerous enough for me. :X it would never make it to gifts.
Your kids must be lucky lol
I lost a molar. Thanks bud.
Always be true to Your teeth otherwise they'll be false to You
Use jaggery instead of sugar
I ate it once during India tour it's a traditional dish called CHIKKI
does this recipe easily double?
Sadly not. The times get screwy depending on the shape and size of the bowls you use and the outside gets overdone while the center is still cool to the touch so it's best to do a single recipe twice rather than chance doubling it.
We can't hear you
I'm the newest comment now
I found some amazing plans for Woodglut. Just check them out.
Please be careful when making this!! I spilt some of the hot mixture on my arm and had to go to the ER. Now I have third degree burns
