I have been making coconut yoghurt using a 1-2tablesoons of milk based yoghurt as a starter and it also works out great. I have a mini yoghurt maker (it's basically like a tiny rice cooker) and it keeps the coconut milk at a nice warm temperature for 8 hours. It's normal for their to be quite a bit of water seperation. I usually just pour some of the water off and then mix the rest in and stick the yoghurt in the fridge. After a few hours in the fridge it's nice and thick. And each time I use it I just remix it.

    it's good, मैंने कल coconut milk को 4chilli tops डालकर ferment करने रखा था और वो लगभग 18 hrs मैं curd बन गया था, पहले coconut pulp and water saperate हो गया जिसे mix करके ही use करना है, क्युकी coconut है तो उसमे smell and taste वैसा ही आएगा जैसा कि normal coconut को 2din बाहर रखकर जब उसका taste थोड़ा change हो जाता है but कडवा नहीं होता, किसी भी curd को बनाते time उसे देखना पड़ता है कि बना कि नहीं otherwise ज्यादा time बाहर रखने पर वो सड़ जाएगा और उसमे rotten smell आएगी वैसा ही coconut curd के साथ है कि उसे बार बार चेक करना पड़ता है, may be सबको उसका taste अच्छा ना लगे क्युकी coconut का taste change हो जाता है और कुछ भी बनाने पर उसका ही taste आता है like मैंने रायता बनाया था और वो same normal curd जैसा ही बना but उसमे curd के taste का difference था जो थोड़ा सा rotten coconut जैसा था so जिन्हें coconut पसंद है उनके लिए ठीक है otherwise उसका taste सबको पसंद नहीं आएगा। 👍
