We are blessed to have access to You Tube where you and others are helping us to stretch our dollars. My goal for this year was to reduce my food budget. I really enjoy trying so many different recipes.

Sometimes these meals cooked on a tight budget turn out to be the favorites. My husband remembers eating tortillas with lard spread on them with a little sugar. He loved it!!
I like the toasted pasta 😋 it gives a slight nutty flavor and the pasta stays firmer . My neighbor gave me tomatilia (sp ? ) last year and i made green salsa with it . Your recipes look so good! Thank you. I want to make the potato tacos .
Boils three tomatoes or burn them im a comal for more flavor, one fourth of an añitos three jalapeños, one garlic little spoon of salt blend it, then put a little oil in pan and your salsa wait 5 mnts and there you have your home made salsa for a week or two.
There’s a restaurant here that every time I order nachos, the meat is made like this. It was always good, but I was confused at why it was like that. Now it makes sense! 😊

Sauteing the pasta is a great idea. I wonder if that prevents the pasta from soaking up too much water too. I make a pasta e fagioli and the leftovers always soak up all the soup liquid too. I'm going to try the soup it looks delicious 😋
I’m Mexican too and I always add veggies to my soup with meatballs i add Mexican squash, small pieces of potatoes, carrots and for the salsa I make it myself i toast three Tomatoes, a 4th of an anion, garlic. Tastes better if you make the salsa yourself at home
I have found that thru my experience of trying to be frugal and budgeting meals, Mexican meals by far work the best, at least for us. We love all the flavor of Mexican food and ingredients are simple and very inexpensive and I cook a large pot of Pinto beans at the beginning of the week and use them thru out in meals as a filler and stretcher so yummy
I heat my tortillas on the stove the same way. Or when I flip them on my comal I use my fingers also. And HEB is where it’s at. lol. Oh yeah the paper towel trick I do that too.Lol

I've seen people make Tinga de zanahoria. Just sauté tomatoes and some canned chipotle peppers before adding the carrots.
