Good morning! I've had a few requests for this over the last year so I'm going to need YOUR favorite recipe! Please leave it typed below! I'm going to pick a handful and make them to share!
I'm a fly by the seat of my pants kinda cook. I take tomatoes that hubby dropped...twice! Chop them and add them to a pan with rice and some sort of red beans and cajun style seasonings. Add enough veggie broth to cook. Serve with garlicky green beans. Don't know what to call it but it's good! Don't forget to have your hubby drop the tomatoes...twice! Must tenderize them or something. Lol! Btw, LOVED your joke! My eyes don't water. Must be the size of my glasses...
This is my new cheap favourite. Carrot coconut soup 2 lbs carrots 6-8 cups of water 1/2 onion chopped 4 cloves of garlic 1 tsp veg broth or cube 1 tsp ginger powder 1 can of coconut milk Roast veggies. Add water to a pot and veg cube. Add ginger and roasted veg. Cook until really tender. Add coconut milk and blend. You can use an emersion blender, but high speed blender is better. It makes it really silky. Enjoy❤️❤️
As a chef in a commercial kitchen we chopped hundreds of pounds of onions a week by hand. We simply put a small fan a foot or two to the left of the cutting board and turned it on low. It blew all the gasses away and we never shed a single tear. 👍🏼👍🏼👍🏼
My favorite way to chop onions is wet chopping them in my Vitamix. There used to be a video on how to do it but I couldn’t find it today. Basically you quarter them, put them to your Vitamix with some water (enough for them to more freely), set speed at “1”, press start and let it go until they are desired size. Strain, but save the water for sautéing. My favorite pantry/fast food meal is chili. One jar salsa, one can of corn, drained, one or two cans of beans (any kind), a little bit of water so the salsa doesn’t burn. If I have leftover sweet potatoes, I chop them up and add them to the pot too. It’s so fast and easy - plus I usually have the ingredients on hand. If I have more time and the sweet potatoes, I add more water because the potatoes take longer to cook.
Not vegan or a Spaghettio fan but wanting to try that recipe! You always have such creative thoughts with basic ingredients. The BEST way to save money on groceries.
Good Saturday morning Mirnda. What a haul. I do believe my favorite item is that creamy lentil soup - especially with just the right amount of garlic added. Thanks for sharing another great recipe and all your tips of remaining frugal. 👍👍
The corn/potato chowder was amazing! However I eyeballed the liquids and unfortunately it was too brothy. Made a quick cornstarch slurry and threw in a scoop of instant white rice to soak up the excess. Crisis averted! 😅 Thanks for another great recipe!
Ooohhhh! Gonna do that spaghetti-os thing! I even have the tiny pasta! Hubby will love it! And I don't care what color it is! Lentil soup is it! Thanks for your inspiration!
Another idea for cutting onions put a wet paper towel between you and the onion on the cutting board. The acids from the onion goes to the 1st moist thing around (that's why it goes to our eyes and makes us cry lol.
Hahaha, that onion chopping trick! This is 💯 the video I needed. I teach preschool and also have some important goals so my budget is tight! I agree, I also don’t like having too much food on hand, more minimal. Making that chowder now! I just bought 6 beautiful Japanese sweet potatoes 🌽🍠 xxo, thanks Miranda💓

I use swimming goggles, they work so well when chopping onions!
I loved spaghetti O's, but haven't had them in ages since they are not WFPB. Can't wait to try the recipe!

Swim goggles. Use swim goggles when chopping onions. I cut up about 10 lbs at a time because I hate to do it!

My salt is always low on my labs. I NEED to add salt or else the muscle cramps get out of control (yes, I eat potassium) and have more migraines.
