Ok girl. This one is not cheap, but it gives me amazing energy and health benefits. I use an instapot for this. 1.5 lbs of a California blend (carrots, broccoli and cauliflower) 8 oz minced garlic 56 oz of medium rotel (tomatoes & green chilies) 5 oz baby kale 5 oz baby spinach leaves 16 oz baby bella mushrooms 14 oz kimchi 1 can of chickpeas 12 oz of 3 pepper blend/ onion 64 oz of soup broth 16 oz Aquafina or Dasani water When affordable I will also add asparagus then I push the high-pressure button and then soup broth button. 30 minutes later I have an amazing vegetable stew.

Never thought to put cornmeal on tofu. Thanks for saying tofu needs a lot of seasoning. I air fried tofu about 3 months ago and it tasted horrible. I usually fry it in oil so I seasoned it like I was going to fry it, airfried it and it was not enough seasoning plus it was so dry and tasteless. Blah. 😖 Those cookies are beautiful. 🥰
Curious if you get your iron and ferritin checked? I’d like to eat more plant based but my doctor warned me that women of child bearing age are bad about getting enough iron in their diet.
That’s not true at all, you can’t just say “everyone at this age” that’s assuming. And yes I get my blood checked every 6 months, I’ve never had any issues. Somethings are genetic which we can’t control but SO many plant foods have iron!
I think it’s a Hispanic seasoning! ground dried chile peppers (a blend of chiles de árbol, guajillo and pasilla), dehydrated lime, and sea salt it’s like spicy with salt and sweet! You can definitely make it if you can’t find it!

Red onion, water (I just use enough to cover!) 2 tbl vinegar + 1 tsp sugar + 1 tsp garlic + 1 tsp onion powder

It's really lime-y with a kick of heat. I'm still figuring how to use it.
