LOL the noodles with the shrimp and steak .. You said "katu" cha .... but when you said "katiew" you said "katu" which is my Cambodian nickname that means "little girl" :) but you said it perfectly for the beef salad :) Also, with the raw beef salad.. what they do is squeeze out all the blood, dry. Then it's cooked with lime juice :)

That dish with the fresh veggies and lime cured beef? It reminded me of Carne Apache. Not sure if you've ever had it? It's basically ceviche but made with ground beef. 😋

What you described of Carne Apache is what we have as “plea beef”: what he’s eating, the beef with herbs. So how we do it traditionally is slice the beef very thin then squeeze lemon juice on it to cook it then mix with herbs and fresh veggies. But I think in the US, most Cambodians cook the beef to medium
rare then slice and squeeze the lemon juice. Cambodians eat a lot of fresh vegetables. I love this dish but I can’t find many Cambodian restaurants in the US. Can only make my own… 😫
