Please Don't watch any video related to our history, cultural, religion etc MADE BY A FOREIGNERS. They don't know any thing or don't understand Our history or culture. So, please choose Indian youtuber for such kind of videos.
All you need to know is that, during the birth of Ganesha, Shiva was away so when he returned and wanted to meet Parvati, Ganesha being asked to guard the entrance stopped Shiva. Shiva went back as he knew his son was asked to do this, but the other gods considered that a mere boy disrespected the Supreme Lord Shiva, so they went to fight with Ganesha.
Little did they know, that after Parvati instructed him to guard the entrance, she also blessed him with her powers("The powers of the Ultimate Supreme Goddess 💥💥💥") that could protect him and help him in adverse situations. As a result the other gods were no match for him. One by one all the other gods got defeated and went to seek Lord Shiva's Protection.
Lord Shiva on hearing their plea once more went to meet the boy, but this time the boy was very overconfident and prideful and started to make fun of other gods, in his pride he also challenged Lord Shiva, that's when things got out of control, the Trident of Lord Shiva got angry, Lord Shiva tried to hold his trident still but couldn't because the boy was being too blatant. As soon as Lord Shiva loosened his grip, his trident on his own accord decapitated the boy.........
NOTE: It was the trident that did the deed, lord Shiva knew the outcome that's why he went back the first time. Also when the boy challenged him he was as cool as ice.

When Parvati came out from inside and saw her son she was devastated and asked for only one thing either revive her son or face her wrath. She would punish every single god that only stood there or was knowingly/unknowingly became the witness of the whole scenario.
Lord Shiva told her that anything that was destroyed by his trident, cannot be brought back to the state it was earlier in.
On hearing this the Goddess took her Durga form and summoned all her forms that could wreak a havoc in the universe. After the goddess started mass murdering session, Lord Vishnu asked Lord Shiva to do something, then they went and brought back an elephant head.
When Ganesh was revived again and Parvati calmed down, Lord Shiva told her that the reason ganesha's head was cut off was that his body was created through the body residue(exfoliated skin) of parvati, that was the reason for his prideful and overconfident behavior(a form of impurity in character) but being a god he cannot have that in him, also the elephant whose head was joined to his body once prayed to lord shiva and asked for the boon that he could have a life where he could be near lord shiva and learn all the knowledge Lord Shiva has to offer.

I’m delighted to see that you tried to learn the story behind the elephant God but this video still doesn’t say anything about why shiva cut off his head. Many people see Lord Shiva in many forms. There is a saying “whatever we think about Shiva, whether he is very calm and always meditating, the exact opposite is also true.” He is very calm yet he is the fiercest God “Kaal Bhairav”. He is the most beautiful God yet he is the ugliest one. He is immortal yet he dies everyday every moment with the death of every living being. He is called Pasupathi (God of all living animals) yet he wears a garland of skulls around his neck. Gods worship him, demons worship him. Everyone worship him. He is “Mahadev”, Devo ka Dev (God of all Gods), He is Nataraj (God of Dance), He is Adiyogi (the first hermit or recluse), He is Adiguru (the first teacher), He is Mahakaal (who is beyond time).

Lord Shiva did that but you do not know the whole story. Little Ganesha made Shiva angry & in anger he did it. Immediately he knew his mistake and gave him new life
Basically Shiva destroy Ganesha's head due to arrogance of ganesha for being supreme as what other story and serial says. After that lord shiva had put elephant head on ganesha body which symbolized many things. If you really want to know read Ganesh Purana or Shiva Purana
Not only the origin story of Ganesha but all the stories are told without any context... Pls watch Indian videos... And not made by foreigners...
Ganesha was made from body dirt of parvati and ashes of mahadev so ultimately ganesha had arrogance, so it had to bet cut. But ganeshas head was cut because of the curse given to shiva by rishi kashyap when shiva punished his son the sun god, rishi cursed that he will cut off his sons head in future.
Another story is that, elephant represents the 1st chakra muladhara as well as the crown, elephant is very intelligent..

Thanks for reacting to this Jane 😊 lord shiva did not apply the same head for lord Ganesha because he can't undo what he has done and hence he also has to follow some rules and also Ganesha jo was guarding his mother devi Parvati because she was gone to take a bath and since Ganesh ji was first created by Devi parvati so when lord shiva came he didn't know that Ganesha ji was his son and when ganeshji denied to let him in he got angry and severed ganeshjis head .

Once sun god surya dev became arrogant and demanded more respect from his devotees shiva warned him that he should not do this but he was still arrogant lord shiva enraged by this struck his thrishul/trident over him and he became unconscious then saint kashyap father of sun god cursed lord shiva that he would one day have to cut his own son's head then lord shiva accepted that curse and he explained that he need to remove the arrogance of sun god that's why he did this even though saint kashyap regretted it he already gave the curse
Next once a demon named gajasur a elephant did great penance to please lord shiva to get a boon that he should be the most intelligent one in the universe lord shiva gave the boon that he will be the most intelligent one and to become that one day he should give his head willingly then gajasur waited for that when the time arrived he gave his head willingly thus the elephant headed god ganesha the most intelligent one came into being
Next goddess parvati made ganesha with her skin dirt because of that he was arrogant, mannerless etc.. lord shiva had to do this for god of wisdom to be born everything happens for a reason 🙏

In the beginning of the story of Kuber it felt as Shri Ganesh was being unjust on him eating all his food and wealth and later it mentioned the purpose behind it. All the stories have meaning behind them. If you don't know it completely it might rub it off in the wrong way.
