I grew up making this for Thanksgiving and Christmas every year But We always used 2 boxes of the Pistachio pudding and We add cottage cheese 2% low fat How ever much you like Not a lot about half or less of a I THINK 16 oz container and It's funny because I kept making it without the cottage cheese and My Mom and sister kept saying You are missing something and I kept saying No I am not Debbie's was more chunky because Our Cousin Debbie used to bring it every year when we were kids Until we all moved to far away from each other for the whole fam to get together like that anymore But I always loved the pistachio pudding and felt like something was missing if we didn't have it LOL So I started making it Every year so I went and found the recipe and started bringing it But My Mom finally called her and asked for the recipe and it was a little bit of cottage cheese She put in it that made it Yummier So maybe Try that way and use 2 boxes of that pudding It just makes it greener in color and is just a bit stronger in flavor but doesn't change it much because of everything else that goes in it LOL I am looking it up because I don't want to forget anything that goes in the fluff /salad/ watergate salad
Leave the cool whip in the fridge the night before..easy peasy

I actually make the pistachio instant pudding and add the rest of the ingredients. I like it better that way, it's nice and fluffy and creamy

An extra package of pistachio pud mix might help it be a bit less runny maybe? Otherwise yeah coconut would help with that lol.
