I mix my cool whip with the pudding mix first. Then I add the can of crushed pineapple and I added walnuts once and the family loves it. It doesn’t take so much energy to mix the pudding and cool whip together before adding everything else.
I use mostly the same ingredients. But I follow the recipe my husband's aunt used to make. She used a container of small curd cottage cheese. And we also put the mandarin oranges along with the pineapple. I do think I will add some extra nuts when I do this at Christmas . 🎄 This is usually the time of year I make it. Looks Christmasy with the red and green.

When I made this I used sour cream instead of cool whip to cut the sweetness. We don’t personally care for things overly sweet. (For us the pudding and pineapple adds plenty of sweetness) It makes it so rich and decadent. 😋

That looks so good with the nuts. I will have to add them to my version. I am not a shredded coconut fan, so I would skip that addition. The version I make calls for a can of mandarin oranges (I would usually add two small cans, drained...but I did not drain the pineapple since it needs that moisture). I am telling you the oranges mixed with the pistachio and pineapple flavors is so good. Plus, you get a squirt of juice when you bite into the oranges. Highly recommend the mandarin oranges!!!
Steph, I just made this today, with 2 differences. I only used 5 ingredients 20 oz can of crushed pineapple -drained 15 oz can of manderian oranges - drained 2 cups plain yogurt 1 cup marshmellows 1pk 3.4 oz pistachio pudding. Mix together like you did. I like nuts but not in my food. The yogurt is more creamy, I dont know if its much better nutrition wise, but its good. Thanks for the inspiration.
I was born in 1950, and momma made this every Christmas. She stirred in some cherries into the light green pudding. Then also sprinkled cherries and pecans on top. The green and red inside, made it Christmas-y.
This is called a Watergate salad. It really needs to sit over night. The sugars in the pudding haven’t completely dissolved. Drain the cherries really good or the red juice will run all over the top and ruin the look.
You can rinse the cherries and remove the stems if your want to mix them inside. My friend use to chop up a few pistachios which added a nice touch on top.

Jello and fruit salads are still popular at my family reunions. I have had an aversion for green desserts since my childhood but this is the only green looking dessert that I will eat and enjoy. I make this all the time. I've never drained the pineapple. You need it for the pudding. With draining the pineapple it comes out too thick. Because the marshmallows obsorb all the moisture. I always make the day before. Try it sometime with the juice.❤
I put stuff like this that drains slowly in a clean flour sack cloth, then twist. Then one day I saw Rachel Ray do the same thing to drain something don't remember what exactly, but, she did it.

Called this green stuff and everyone loved it. Never drained the pineapple and it came out perfectly.
