    I've commented on this before but i'm going to say it again. Your commentary reminds me of watching Jacques Cousteau and Dick Proenneke when I was a child. They did their own commentary too and you have very similar magical tones. What ever you do please never stop doing your voice overs. That is what makes your videos exceptional.

      I would love to have seed for them, domesticated trees are susceptible to so many diseases, because they have been bred for the perfect medium size red round apple. If you look at wild ones they are mostly small and odd shaped, but tend to have more flavor and the trees are hardier

    Dear Mr. Outsider, not one to usually comment, but have to say that the comment from Richard Bishop struck a deep chord. I have been subbed over a year and what caused me to do so was the resonance of your voice. It lends a weight to the values and a depth to your actions that come thru on yr videos. Your keen eye and perception are beautifully conveyed by your photography (of our very photogenic wilderness!).
    Also, I am so impressed by the way you reflect the innate sense of stewardship, and you do it equally well as Shawn James does. Your voice carries.
    May the lines keep falling to you (and the family) in pleasant places. You have a good inheritance...

    Oh, how I love Autumn! The air is just so clean to me. Best time to be in the woods in my opinion. Great music choices. Sir, you are quite the wordsmith. I admire your poetic/philosophical approach to stewardship of the forest and land. Your articulate narrative is so well thought out. Jack London stories used to be my go-to reading when I was younger. Apples and Fall, yes! You have an Artist's eye for staging the "bounty of Autumn". Lovely meal. Lovely video as usual.

      And on this day thou shalt do none other thing, only let thy food be prepared with singleness of heart that thy fasting may be perfect, or, in other words, that thy joy may be full.
      Verily, this is fasting and prayer, or in other words, rejoicing and prayer.
      And inasmuch as ye do these things with thanksgiving, with cheerful hearts and countenances, ... with a glad heart and a cheerful countenance-
      Verily I say, that inasmuch as ye do this, the fulness of the earth is yours, the beasts of the field and the fowls of the air, and that which climbeth upon the trees and walketh upon the earth;
      Yea, and the herb, and the good things which come of the earth, whether for food or for raiment, or for houses, or for barns, or for orchards, or for gardens, or for vineyards;
      Yea, all things which come of the earth, in the season thereof, are made for the benefit and the use of man, both to please the eye and to gladden the heart;
      Yea, for food and for raiment, for taste and , to strengthen the body and to enliven the soul.

    Here in Switzerland we traditionally boil down the apple juice (pear juice or a mix) even more, until it's thicker and darker, but also has a more pronounced caramelized taste. You'll also find a few places in Europe where this is still done.
    It's kind of interesting how you'll find a similar tradition so far away. That looked simple yet delicious too.

    • @arrogantsquirrel
      @arrogantsquirrel 5 ปีที่แล้ว +1

      Do you add sugar or anything? I've tried this recently and it turned out quite sour.

    • @ivanlagrossemoule
      @ivanlagrossemoule 5 ปีที่แล้ว +1

      @@arrogantsquirrel Either your juice wasn't sweet enough (the pear juice sweetens it) or you caramelized too much of the sugar. It shouldn't overheat at any given point. You can also try it with plumbs by the way. The ratio of juice to finished product is generally 10:1 (as opposed to 6:1 here).
      You're not supposed to add sugar, but the industrial one you buy here does have added sugar. As long as you enjoy the end result I don't think it matters. But originally it was used as a sweetener and lasted as a sugar alternative until sugar became cheap enough.

    Thank you for putting into words exactly what a true and responsible woodsman does. People that point their fingers at wilderness dwellers and woodsmen as destroying the ecology have no idea. And then they go home at the end of the day to their little box on the hillside that was created by a massive company coming in and cutting the earth barren to create their neighborhood and sell you sod and plants to put on the property. And the whole time they blame woodsmen for the problem when in fact THEY are the major contributor.

    Good video. I love the music and the way you tell the story. The fall colors are sure pretty too. We don't have hardwoods here, but the aspen has all turned yellow.

    you have some beautiful country.....almost makes me a little homesick for Alaska (spent 4 years there in Fairbanks when i was in the USAF) Autumn was always so very short up there, but it was always gloriously colored...

    I was having some maple syrup with my biscuit this morning and it made me think of this channel so I’m now watching while I eat.
