- AVAL VILAYICHATHU
Ingredients
1) Flattened rice (Aval) - 1 cup (pressed down well)
2) Grated coconut - 2 to 2 ½ cup
3) Grated Jaggery - 3 cups
4) Ghee - 2 to 3 tbsp
5) Crushed cardamom - 5 to 6
6) Sesame seeds - 2 tbsp
7) Greengram dal - ½ cup
Preparation
1) Heat 1 cup of water & the grated jaggery in a pan, stirring to melt, & make it honey like.
2) Add the coconut, heat stirring till the water from coconut dries almost keeping it moist also.
3) Put off flame, cool slightly, add the aval & stir well to mix.
4) Add ghee, Cardamom, dry roasted dal & dry roasted sesame seeds. Stir well.
Serve only after 24 hours.

Long awaited aval vilayichathu .I wanted the traditional recipe and yours is the genuine recipe. As you said, this was an important dish which was served to all family members on the previous day of wedding along with pazham in my younger days and I remember the preparation of aval vilayichathu in a big uruli.I make it often but sometimes the product will not come out perfect.Thank you for the perfect recipe

I wonder why so many equipments are designed for climbing the coconut tree. In Goa they make steps on the coconut tree and just climb. Why this comment because when you spoke of availability of coconut in house, I just happened to think why the availability now is in question and why we almost stopped planting coconut tree in our house.
